Today is all about celebrating one of the world’s most loved comfort foods — from creamy brie and sharp cheddar to gooey mozzarella and everything in between. Whether it’s melted, sliced, baked, or paired with your favourite snack, cheese has a way of making every moment better.⁠

🧁 Win-Win Muffin Recipe 🧁

Makes 6 large or 12 small muffins

Ingredients:

60g Butter
60g Sunflower Oil
200g Caster Sugar
100g Eggs
1 Tsp Vanilla Extract
120g Buttermilk
220g Plain Flour
2 Tsp Baking Powder
½ Tsp Salt
175g Win-Win Milk Bakestable Chips

1. Preheat the oven to 175c (fan)

2. Combine butter, oil, and sugar in a large bowl and whisk together.

3. Add egg, egg white, and vanilla extract. Whisk together thoroughly, until all ingredients are well-combined, then stir in buttermilk until combined.

4. In a separate bowl, whisk together flour, baking powder, corn starch, and salt.

5. Fold dry ingredients into wet gently, taking care not to over mix. Once about half of the dry ingredients have been incorporated into the batter, add in Win-Win bakestable and continue to fold in to batter until all ingredients are just combined.

6. Line the the muffin tins with paper cases and portion the batter into the prepared muffin tins, filling each tin almost to the top.

7. Bake in the oven for 20-25mins until the muffins are turning golden brown. Leave to cool.

🤍 Win-Win White Mousse 🤍

Makes 6
Ingredients:
190g Win-Win Easymelt White
120g Egg whites
1 Tbsp Caster Sugar
225g Double Cream

Method
1. Slowly melt the Win-Win easymelt white buttons over a pan of simmering water

2. Weigh the egg whites & double cream into separate bowls

3. Once the buttons have melted, remove them from the heat

4. Whisk egg whites to soft peaks, add in caster sugar & continue to whisk to stiff peaks

5. Clean the beaters, then whip the double cream to soft peaks, don’t overbeat, as the cream should still be quite loose

6. Working quickly, pour the melted buttons into the cream & mix well. Immediately add in 1⁄4 of the whisked egg whites & stir well to loosen the mixture.
Fold in the rest of the egg white in 2 or 3 portions, being careful not to knock too much air out of the mixture

7. Divide the mousse between six glasses, ramekins or dariole moulds and chill in the fridge until set, approx. 1h

🍫 Win-Win Dark Ganache Recipe 🍫

Ingredients -
175g Win-Win Dark
125g Single cream
25g Glucose syrup
20g Butter

Method -
Weigh out the Win-Win dark into a bowl. Place the cream & glucose syrup in a saucepan, heat to 80C. Pour over the buttons & stir until melted. Add in the butter & mix until smooth & glossy. Leave to set for 1-2hrs in the fridge.

Win-Win, Hybrid Brownie -

Makes 12

Ingredients:

240g Butter
360g Sugar
240g Win-Win Dark
195g Egg
110g Plain Flour
54g Cocoa Powder
2g Salt

Method -
1. Preheat oven to 170c (fan) and line a 12.5 x 7 inch brownie tin with parchment paper

2. Gently melt the butter and the sugar together in a large pan, until all of the sugar has dissolved. Once combined, take off the heat and add Win-Win dark, stir until melted

3. Beat in the eggs, then stir in the flour and the cocoa powder

4. Pour the brownie batter into the lined tin and bake for 20 minutes, or until the top of the brownie is just firm but there is still a gentle wobble in the middle

5. Take out of the oven and leave to cool in the tin
