Introducing Pillars of Creation 2026

Deconstruction of flavour. A collision of Ireland’s new wave. 🥃✨

Today, we peeling back the layers on a monumental double-drop that showcases exactly what happens when you marry the distinct DNA on some of the most exciting distilleries on the island: (Co. Waterford) and Lough Gill Distillery (Co. Sligo).

Let’s break down the liquid geekery behind Pillars of Creation (2026 Vintage) and The Lost Chapters (Ch. 1):

🔬 THE DECONSTRUCTION:

The Component Split: A deliberate 60/40 marriage of Single Pot Still spirit and exceptional Single Malt.

The Provenance: The Single Pot Still brings that heavy, unmistakable Irish spice from the south coast at Blackwater, with dank leather notes, while the pristine Single Malt adds a lifted, mineral freshness and fruity backbone from the northwest at Lough Gill.

The Cask Artistry: Before coming together, the SPS drew full Oloroso sherry cask influence, while the single malt drew a full American Bourbon 1st fill. We then married them for an additional 8 weeks in a fresh 500L Cream Sherry Butt direct from Jerez.

🔥 THE SENSORY PROFILE:

Nose: Deep, dark, and complex. Think dried cherries, cola sweets, raisins, and a soft, honeyed nuttiness from the Sherry influence.

Palate: It hits with that rich pot still punch—ginger, leather dankness, and caramelized apples, balanced perfectly by the crisp, precise fruit notes of the single malt.

Finish: A beautifully weighted, cask-strength finish at 58.5% ABV, leaving lingering notes of salted chocolate and deep sherry dryness.

Whether you’re eyeing the Pillars of Creation (350 bottles total) or diving into the artistic depths of The Lost Chapters Ch.1, this release is a testament to what collaborative Irish bonding is all about.

Pillars of Creation 2026: Behind the Blend.

This year started with two exceptional casks chosen for completely different reasons.

G.I Single Pot Still from , Co. Waterford, fully matured in Oloroso Sherry Cask BLA0009 - rich, oily leather and full of dark fruit depth. (40% compostion)

Single Malt from Lough Gill Distillery, Cask TS0042, Co. Sligo, a bright orchard fruit and sweet vanilla, fully matured in first-fill bourbon cask. (60% composition)

A classic Pot Still and Malt marriage. 60/40
Finished together for 8 weeks in a 500L Cream Sherry Butt to bring the final layer into place.

Hidden within the 2026 blend is another great story.
The inagural Lost Chapters bottling, deconstructing Pillars of Creation back into its original elements, revealing the individual casks before experiencing the whiskey as one complete composition.

Sometimes the whole really is greater than the sum of its parts.

Different styles, different stories, brought together with purpose.

Some casks made it. Most didn’t.

This reel captures a small part of that process — the obsession, the doubt, the excitement of finally finding “it”.

Our Single Pot Still – Triple Sherry Cask release brings together everything we love about the style.
