It’s April already and what a year it’s been so far. I’ve been doing a lot of reflecting lately, and honestly, I just feel incredibly grateful.

Grateful for El Piloto. Grateful for the opportunities we’ve been given. And grateful that this is shaping up to be one of the most exciting years we’ve ever had. We genuinely can’t wait to share what we’ve got planned with you all, you’ll definitely be seeing a lot more of us.

None of this happens without you. Every single person who’s walked through our doors, every compliment, every conversation, it all means more than you probably realise. You’ve played a part in building something really special.

2026 hasn’t been an easy year personally for me and Steph. From finding out Steph had cancer to facing a number of other tough moments, it’s tested us in ways we didn’t expect. But through all of that, what’s kept us going is this business. The strength it’s given us, the purpose, the community around it it’s carried us through.

Running a business is hard. There are sleepless nights, constant pressure, and moments where you question everything and that’s outside of life’s struggles. But when you start to see that hard work paying off, it reminds you exactly why you kept pushing. It really is true hard work pays off.

To our staff, our family, and our close friends you’re everything. We’re not just a business, we’re one big family. That’s what sets us apart. What we’ve built together is real, it’s unique, and you won’t find it anywhere else.

We’re authentically us and we’re proud of that.

Today is International Women’s Day, and I want to take a moment to recognise someone who means everything to both me and El Piloto, Steph.

Steph has been a huge part of this journey from the very beginning. She believed in the concept from day one and has never given up on me, even when the odds were against us. Through all the ups and downs, she’s always had my back and stood beside me.

Her support, belief, and strength have helped shape El Piloto into what it is today. This business wouldn’t be what it is without her.

Our team love her.

She’s the true champion.

From the very start, when things were tough and there was a lot to learn, Amy was there. She showed loyalty from day one and properly got stuck in with what has always been a family business. Those early days weren’t easy, but she gave it everything and stood by us.

As El Piloto has grown, we’ve been lucky to build such an amazing team honestly a great team of people. Now that Amy has moved from our original site to work permanently at our Manchester site, it’s really good to see her join that team and bring all her experience and loyalty with her.

Amy, thank you and well done. You’ve been there from the start and you smashed it. You’ve been there through the ups and downs and always backed us. We don’t say it enough, but thank you it really is appreciated.

The Pilot.
The one who shaped the person I am today.

He taught me how to swim, ride a bike, ride a motorbike, drive a car.
How to use a screwdriver, build things with my own hands, and fix what’s broken.
He taught me how to hold my own in an interview, how to run a business, how to stand my ground.

He showed me how to be kind but skeptical, smart but aware, profitable yet humble.
To be different, to have integrity, to be honest and courageous.
He taught me how to earn respect and so much more than I could ever list.

He picked me up from school, sat through parents’ evenings, supported us in every way.
He gave us a home, cooked for us, repaired everything, and looked after us always.

There’s a reason my business is named after him.
Because he made the success possible.
He’s the voice in the back of my mind when things get tough the reason giving up never felt like an option. With someone like JT behind you, how could it?

I remember one of the most daunting interviews I ever had in London.
I called him beforehand and said, “I’m nervous.”
His reply?
“Who are these people? They’re just like you and me. What’s so special about them? You can’t be intimidated by anyone.”
Simple words exactly what I needed.
I went in, smashed the interview, and walked out with a new mindset.

He wasn’t just a grandad.
He was a dad, a leader the true definition of a family man.
Selfless. Steady. Strong.
“Hear everything, say nothing.”
The best advice he ever gave me and it’s guided me right every time.

It’s so final and so sad, but I know you’re in a better place.
It still feels surreal, but I’m certain you’ll be keeping an eye on us all.

I owe every success to you.
I’m just so grateful you were here to see it make sure you tell Margo all about it.

It is with a heavy heart I announce that we’re relocating from our site at Congleton Market Quarter. You guys are great and have supported this business into what it’s become today. I will be forever grateful to the community & I sincerely hope you travel further a field to come and get yours tacos & quesadillas!

Without you guys and our amazing staff none of what we’ve achieved would have been possible, and we wouldn’t have been given the opportunities we now have lined up.

For every single sale, I want to personally say thank you. Without you, none of this growth would be possible, and we wouldn’t be where we are today with the opportunities that have been presented.

There’s a lot of people who are responsible for my success but this man in particular deserves his own post.

Back in school I was disruptive, distracted and massively challenging to deal with. A real pain in the **** I’m sure he’d agree.

He zoned into what I was good at and how to get the best out of me, but more importantly he believed in me when no one else did. He kept me in school and if it wasn’t for him and a few other people I can honestly say El Piloto wouldn’t have even existed.

He was there on our opening day and he was there today, just turns up like it’s no big deal but it is.

I can’t imagine the impact he’s had in general on the schools he’s taught in but I can vouch that he changed my life entirely and for that I’ll never forget.

DPU you’re a legend! And like I said today it wasn’t a waste of time!
