Classic Victoria sponge cake 👍🏼

As I do with all of my cakes, I creamed the butter and sugar for 4 minutes before folding the flour very gently. To achieve a soft edge, I use cake strips. They insulate the sides of the cake pan so the batter cooks evenly!

Amaretti biscuits straight from the oven 🙌🏼 So soft in the middle with a crunch on the outside. I used ground almonds and honey to bring out that classic flavour. Dusted with icing sugar, you’ll want to eat more and more!
