It’s liquid because it’s warm/melted beef fat. Once it cools, it should solidify into the familiar pale/cream-coloured dripping.
And looking again, the golden-brown colour is quite typical of rendered beef fat with meat juices/impurities, rather than pure clarified fat.
I definitely fell for the honey appearance there! ‘😄
