Three things I look at before anything else.

Does the contact form actually arrive. Half the ones I test do not, and nobody finds out until they wonder why the phone has gone quiet.

How long the front page takes on a phone on 4G, rather than on your laptop on the office wifi.

Whether a stranger can tell what you do and where you are inside five seconds.

Sweet is a savoury flavour in Thai cooking. That's why there's pineapple in the rice.

Five flavours run through this food: salty, sour, sweet, bitter and hot. Sweet isn't the pudding at the end of it. It's one of the five things a savoury plate gets balanced with.

So the pineapple in this rice isn't a novelty and it isn't there to look pretty. It's doing the same job the fish sauce is doing at the other end of the plate. It comes to the table in the pineapple it was carved out of, which helps.

Schools went back today and the town's evenings go back to normal with them. We're open from 5, the kitchen runs to 9.30, and booking is by WhatsApp.

Name the dish you nearly didn't order that you now order every time.

Every table has one. The plate you only tried because somebody else insisted, and now the menu barely gets opened. Tell us yours below. Every answer gets a reply from the kitchen, and if yours is one we hear a lot, we will say so.

No school tomorrow and no work tomorrow for most, so tonight is the Sunday dinner that is allowed to run late. The kitchen is on until 10:30pm and booking is by WhatsApp.

Fylde kick off at Mill Farm at 7:45 tonight and we open at 5. Dinner first, football after, and time to spare.

In the photo is our rice noodle stir-fry(pad sie-ew), cooked to order like everything in the kitchen, and quick enough that nobody misses kick off.

The kitchen runs to 9:30pm, so there is room after the final whistle too if you would rather eat once it is done. Booking is by WhatsApp.

We asked for one flavour to build a cocktail around. Seventy five of you answered.

We are reading every single one. We are not going to rush the build. The first drink to come out of that thread goes up on this page the moment it is in a glass, named, with the person who suggested it credited next to it.

That tuk-tuk is painted on a wall in Kirkham with our name on the front and Bangkok behind it.

Look past it and there's the river, the temples, and a little painted market stall with "The Old Bank" on it. That is the building you're sat in.

Tata grew up beside his auntie's food cart in Bangkok. That is where he learned to cook, before he learned anything else. He took a degree in English. Then he went to culinary college in Bangkok and learned to do it properly. The classical cooking, the presentation, all of it. Twelve years in Belgium after that, pulling shots in a Starbucks. Then this country, and a fish and chip shop, where he put a few Thai dishes on as a side thing.

The chips lost.

Twenty-five years and more of cooking Thai food, and he has ended up stood in front of a painting of the city he grew up in, in a Lancashire market town.

School's not back until Tuesday 1 September, so there are still two Sundays left where nobody has a school run in the morning. Come and sit down.

There's a gap at the bottom of the cocktail list. Give us a flavour and we'll build something from it.

Not a recipe. Just a flavour. Lemongrass, tamarind, coconut, blackcurrant, whatever you actually like drinking.

We'll take the one we think we can do something with, make it properly, and post what comes out of it.
