Sheās sweet and sheās citrusy, but most of all, sheās full of flavour š!
Please welcome my gorgeous HOLIDAY SALAD with SWEET POTATO, CRISPY SAGE + MAPLE WALNUTS!
Iāve shared some winter treats recently with you guys, so I thought Iād be a responsible adult and make sure weāre all getting our veg in too. We need those vitamins and nutrients to boogie our way through this busy season...now is not the time to get sickš!!
No need to panic though - I make eating your veg oh-so moreish. In this holiday salad, youāll get a boost of fibre, vitamin C, iron and healthy fats. Thereās an incredible combination of tang, tartness, salty feta, crunchy seeds and nuts, as well as leafy kale, crispy sage and delish sweet potatoes.

Serves 2ā
2 medium sweet potatoes, peeled + cubedā
1/4 tsp garlic powderā
1/2 tsp ground cinnamonā
1/2 tsp ground cuminā
2 tbsp olive oil + 2 tsp for the sage
1 medium red onion, thinly slicedā
2 cups kale, chopped ā
10 sage leavesā
1/3 cup walnutsā
2 tbsp pumpkin seedsā
1 tbsp maple ā
ā
DRESSINGā
Juice of 1/2 orangeā
2 tbsp olive oil
1 tsp red wine vinegarā
1/2 tsp dijonā
ā
TO SERVEā
3 tbsp pomegranate seedsā
1/4 cup feta, crumbledā
ā
Preheat oven to 200C / 180 fan. ā
ā
Add sweet potato to a baking tray and toss with garlic powder, cinnamon, cumin, salt, pepper and olive oil. ā
ā
Cook for 35 mins, then add the onion for a further 5 mins. Add nuts to a corner of the tray, toss with maple and roast everything for 5 more mins. Allow nuts/seeds to cool and crisp up, then chop.ā

Mix dressing ingredients together in a bowl.ā
ā
Fry sage leaves on low heat in 2 tsp olive oil till crisp and set aside on kitchen paper.ā
ā
Toss veggies with 1/2 of dressing. Top with maple nuts, sage leaves, feta or parmesan, pomegranate, and drizzle over remaining dressing to taste.
