As we start to bring our vegan pâtisserie garden walk to an end, today we discover playful takes on classic favourites, a delicate nod to the history of tea in England, and the chocolate, marshmallowy decadence.

Along the path, we find:

Black tea with refreshing notes of bergamot, captured in an Earl Grey tea panna cotta.

A playful take on peanut butter and jelly, with raspberry ganache and peanut butter macarons.

The chocolate, marshmallowy decadence of dark chocolate, caramel, hazelnut praline and fluffy meringue tarts.

For me, making something delicious is, of course, at the very core. But the true heart of designing and creating lies in the memories relived and the stories told at first taste.

A Patisserie Painting

A walk amongst flavours.

They speak of the joys of the season; of lemon, peach and berries. They speak of warm memories shared between a papa and child. They speak of candlelit first dates and sunlit adventures.

At first sight, at first bite, the heart connects with something old, something new.

Embraced by nature’s floral gifts, sculpted by the artist’s hand.

When I first started creating cakes, I kept most of them on display in what we called the cake room. My sister used to joke that, once we had all gone to bed, she imagined the cakes coming to life and chatting amongst themselves. We would laugh and wonder what they might say.

Perhaps they would tell funny stories about how long they had taken to create. Perhaps, in those early days, they would quietly speak of the sadness I had poured into them, and how creating them became a way of making sense of feelings I couldn’t always put into words.

These days, I don’t make as many cakes simply for the joy of creating as I once did, and I rarely keep them on display. But if I did somehow get to keep all the cakes we’ve had the privilege of creating for our clients over the years, I imagine their conversations would be similar, yet a little different. They would speak of the heartfelt stories of the people they were created for, the meaning woven into each detail, and how proud they were to carry those stories through their form.

I imagine the sugar flowers having a little dance, joyfully reflecting on their counterparts in nature, each one celebrating the beauty that inspired it.

Inspired by intricate French architectural mouldings, each facet of the hexagon represents a decorative wall panel. As the eye travels around the cake, something new is revealed at every turn. Little details bring depth, interest and dimension, yet remain beautifully harmonious.
