In 2017, our founder William Shotton was faced with a potentially life-changing health diagnosis that led him to re-evaluate the connection between nutrition, microbiome health, and the foods we consume every day. Drawing on decades of experience in food technology, microbiology, and process engineering, William immersed himself in the science of functional nutrition and the traditional craft of fermentation.

The first ferments were created at a kitchen table in the heart of the Wye Valley, surrounded by orchards rich with local fruit and a landscape rooted in natural abundance. Those early small-batch experiments sparked something far greater — a mission to create living drinks that combine scientific understanding with traditional fermentation methods.
