Lamb and aubergine masala
The first time I tried lamb with aubergine was during a trip to London while writing an article. Initially, I was a bit skeptical about how the two would pair, but I soon realised there was no need for concern – not only did they complement each other perfectly, but the combination was absolutely incredible. Aubergine has a hearty, meaty texture that absorbs the rich juices of the lamb, intensifying the flavours. It’s the perfect dish for meat lovers. £14.50
Chicken chapali kebabs
Chicken chapali kebabs originate from Peshawar in Pakistan. I feel my version is more refined for a sophisticated palette. Freshly chopped herbs, onions, tomatoes and spices add so much depth to this kebab. £9.50
Starters
Vegetable Samosa
This Punjabi Samosa is as traditional as it gets, potato-pea stuffing and all. It’s crispy and flaky and spicy and, to cut a long story short, just as a samosa was meant to be by the genius who invented this hand-held snack synonymous with Indian cuisine, restaurant appetisers, and rainy days. £5.00 (VF)
Aloo tikki
Mashed potatoes are blended with fresh herbs and spices and made into small patties and cooked. The crusty exterior lead into the soft and delicate centre. Served with a spicy tamarind sauce and sweet yoghurt. Straight from Delhi! £6.50 (V)
Roll up, roll up!
I think a good spring roll is summed up by a well seasoned, well spiced filling, and a light, crisp pastry Filled with authentic Punjabi spices and vegetables really makes this spring roll gives its sibling the Chinese spring roll a run for its money. £6.50 (VF)
Nawabi chicken seekh kebabs
A recipe I came across on my travels to India and I share the exotic flavours with you. Hand roasted spices then coarsely ground and infuse the tender chicken mince. Cooked slowly in a tandoor oven. £5.00
Lockdown chicken kebabs (Lockdown is over but these are still the favourite)
These lockdown chicken kebabs are delicious and very moreish. The fresh flavours of mint, coriander, fresh ginger, garlic and spices blend perfectly. £7.50
Main course
Chicken methi malai
If you visit any family in India they are surely going to rustle up this curry. The earthy flavour from the fresh fenugreek and the combination of fresh cream works perfectly. The chicken remains soft and tender as it cooks slowly in the creamy sauce. £11.50
Amritsari chicken masala
I may have mentioned before how much I’m in ore of Amritsar. Primarily the religious aspect but the food keeps drawing me in. There are hundreds of small roadside cafes run by the same family for generations and the food will always taste the same on every visit. This is chicken masala do £11.50
Lamb pilau rice
This is comfort food at it’s best. Boneless pieces of leg of lamb is marinated in yogurt, ginger, garlic and marinated for 12 hours. The lamb is then cooked slowly with a blend of spices and Indian basmati rice and the final product is mouth watering. A perfect accompaniment to this dish is raita. £13.50
Vegetable Jalfrezi
This isn't something we would eat at home, but it is one of those restaurant favourites that everyone wants to cook. Jalfrezi really refers to the cooking style rather than the dish. Broken down it translates to 'jal' or 'jaldi' which means quick and 'frezi', which is to fry. £9.50
A bit of company on the side is always appreciated …
Dal Bukhara
Dal Bukhara is famous all over India. Its the signature dish of the Bukhara, a restaurant at the ITC Maurya Hotel in New Delhi. Famous for its tandoori (clay oven) dishes, the recipe for this slow cooked dal is a hugely guarded secret. I have eaten the original dal, and let me tell you, its an experience that can never be forgotten. Soft, creamy lentils almost melt in your mouth, and the mellow, yet fiery spicing takes a while to materialise on your tastebuds. £4.00 (VF)
Chickpea masala
chickpea masala is a very popular north Indian dish. Each city has it’s own version and there are many interpretations of this dish £4.00 (VF)
