Having recently returned from India, I find myself inspired in a way that only time spent there can offer.

Something rather special has been quietly taking shape—and I’m delighted to now share the new Sukhi’s Kitchen menu.

A refined expression of Punjabi cuisine, shaped by heritage, travel, and a renewed perspective.

Tomorrow at The Turkey Shed — elevated Indian food arrives in Saddleworth.

Bold, luxurious and unapologetically delicious.

Our Lamb & Aubergine Masala is one of the stars of the menu — locally reared Saddleworth lamb, slow-cooked until meltingly tender, paired with silky aubergine and layered with deep, fragrant spice using my 2 Gold Star award-winning curry paste. A rich, soulful combination that simply belongs together.

Served with home-pickled onions, vibrant beetroot raita, lime & coriander poppadum, with the option to add golden onion, potato & spinach pakora for the perfect finishing touch.

This is Indian food with elegance, depth and serious flavour.
Come hungry.

Vegetable Samosa
This Punjabi Samosa is as traditional as it gets, potato-pea stuffing and all. Lamb and aubergine masala
The first time I tried lamb with aubergine was during a trip to London while writing an article. Initially, I was a bit skeptical about how the two would pair, but I soon realised there was no need for concern – not only did they complement each other perfectly, but the combination was absolutely incredible. Aubergine has a hearty, meaty texture that absorbs the rich juices of the lamb, intensifying the flavours. It’s the perfect dish for meat lovers. £14.50

Dal Bukhara
Dal Bukhara is famous all over India. Its the signature dish of the Bukhara, a restaurant at the ITC Maurya Hotel in New Delhi. Famous for its tandoori (clay oven) dishes, the recipe for this slow cooked dal is a hugely guarded secret.
