1 & 2. Grilled Wings. My 2 favourite flavours, Buffalo & Gochujang.

3, 4 & 5. The amazing Hereford from

6 & 7. Thai Pork green curry.

8 & 9. Chicken Seekh kebabs.

10. I spatchcocked a whole chicken, smothered it in gochujang sauce, and grilled it. Served it with rice and a cucumber salad.

11 & 12. I made this to eat whilst watching football. Wings, grilled halloumi, tater tots, cucumber, carrots, chilli sauce, and blue cheese dips.

13. Castle Beach, Tenby. Unfortunately, we had to go to Tenby at the end of September for my brother in laws funeral. RIP Will 🙏

This past weekend, invited me back to be a part of their team at St Albans. had put together an amazing menu for the weekend. We got through around 200kg of steak. All cooked over fire. It's now 2 days later, I've had 3 showers, yet I can still smell that smoke.....and I love it!!
Thanks for having me back it was great to see the rest of the team again & Darren.

500g Lamb Mince
2 tsp Ground cumin
2 tsp Coriander powder
2 tsp Paprika
1 Finely chopped onions
1 Finely chopped red chilli
3 Grated garlic cloves
Chopped coriandrer

Grilled Beef kofta.

I made these beef koftas. Grilled them.
I then thinly sliced some red cabbage. Mixed it with olive oil, cider vinegar, sugar, salt, and lemon juice.
Grilled the breads.
I then made a bed on the bread using the red cabbage and some sliced lettuce.
The beef kofta was laid on top of that.
Drizzled with masala chilli sauce, mint yoghurt, and some chimichurri.
Garnished with thinly sliced red onion and coriander.
Finished with a tiny bit of scotch bonnet hot sauce on top.

Jamaican Curry Chicken 🇯🇲

I got some chicken thighs. Removed the skin. Chopped the thighs in half. In a big bowl with Curry powder, all purpose seasoning, grounded pimento, pepper, grated ginger, minced garlic, chopped onion, chopped red bell pepper, chopped scallion (spring onions), chopped scotch bonnet chilli, thyme.
I mixed it all together and then let it marinade for 24 hours.
The next day, I heated it all in a big ass pan. Then, I added coconut milk and chicken stock. Let it simmer for a lil bit then added carrots and potatoes.
Then it simmered a lil more until the curry sauce thickened.
Served with basmati rice.

Gochujang pulled pork with Korean slaw.

The pork shoulder was rubbed in a homemade rub consisting of Chinese 5 spice, garlic powder, onion powder & chilli powder.
Smoked for 8 hours.
Then, pulled and smothered in a gochujang sauce made with gochujang paste, garlic, ginger, ketchup, soy sauce (dark & light), sesame oil & rice wine vinigar
The slaw is a simple slaw made with cabbage, carrot, spring onions, red onion & red bell pepper all thinly sliced then mixed with rice wine vinegar, gochujang paste, fish sauce, soy sauce, sesame seeds, grated garlic & ginger.

All in between a toasted seeded brioche bun.
