Watermelon Rind Candy

Ingredients

* White part of ½ watermelon rind
* Sugar — roughly the same weight as the prepared rind

Method

1. Cut away the green skin and keep only the white part and a little bit of red part of the watermelon rind.
2. Cut it into small strips or bite-sized pieces.
3. Put the rind and sugar into a saucepan. Leave it to dissolve.
4. Cook over low heat, stirring occasionally. The watermelon will release lots of water.
5. Continue cooking until most of the liquid has evaporated and the rind becomes sticky, glossy and thickened.
6. Transfer the pieces to an air fryer and cook at 100°C for about 1 hour, turning or shaking occasionally.
7. Let them cool completely. They will become chewy and candy-like as they cool.

đź’ˇ Tip: If you want them sweeter and more like traditional candied fruit, you can leave them to dry a little longer after air-frying.

VIETNAMESE STEAMED RICE ROLL HACK

Ingredients

200g prawns, roughly chopped
40g sweetcorn or carrot, finely chopped
1 spring onion, finely chopped
½ tsp bouillon powder
½ tsp black pepper
6 sheets rice paper

🌸 Method

1. Make the filling
Add the chopped prawns, sweetcorn or carrot, spring onion, bouillon powder and black pepper to a bowl. Mix everything together.

2. The rice paper hack!
Dip 2 sheets of rice paper into a bowl of warm water for about 2 seconds. Shake off any excess water.

Place the rice papers on a chopping board. Add some of the prawn mixture, then fold and roll nicely but not too tight.

Repeat with the remaining rice paper and filling.

3. Steam
Place the rolls in a steamer and steam for approximately 12 -15 minutes, or until the prawns are fully cooked.

🥣 Quick Dipping Sauce

Mix together:

â—Ź 2 tbsp light soy sauce
â—Ź 1 tsp sugar
â—Ź 1 garlic clove, finely chopped
â—Ź Chilli, finely chopped, to taste
â—Ź 1 tbsp hot water
● ½ tsp sesame oil
â—Ź 1 tsp lime or lemon juice

Mix well and serve with the warm steamed prawn rolls.

🍓 Raspberry or Strawberry Matcha Latte

Ingredients

* 2 tsp condensed milk
* 2 tsp matcha powder
* 2 tbsp warm water
* 1 tbsp frozen raspberries or frozen strawberries
* 50–70ml fresh milk or almond milk
* Ice cubes

Method

1. In a small bowl, whisk the matcha powder with the warm water until smooth and frothy.
2. Add the frozen raspberries or strawberries to a glass and lightly crush them with the condensed milk.
3. Fill the glass with ice.
4. Pour in the fresh milk or almond milk.
5. Slowly pour the prepared matcha over the top to create beautiful layers.
6. Stir before drinking and enjoy!

Tip: For a sweeter drink, add a little more condensed milk. For a stronger matcha flavour, use a little less milk.

My private Vietnamese cooking classes are perfect for couples, groups of friends, families with teenagers, and even children. It’s a wonderful way to spend quality time together while learning a new skill.

In around two and a half hours, you’ll choose your own menu and learn how to make two delicious starters and one authentic Vietnamese main—from fresh summer rolls and crispy spring rolls to pho, sizzling fish noodles, or Vietnamese BBQ chicken noodles.
