Let me talk you through how we build our southern fried chicken baguette, because there's more thought in it than you'd think. It starts with the bread, that proper crusty roll, crispy on the outside and soft in the middle, and if you listen you can actually hear the crunch. The barbecue sauce doesn't go straight onto the bread, it goes on the filling, because the second it soaks into the bread you lose that hit of flavour when you bite in. Then the fried chicken strips and the streaky smoked bacon for a bit of depth, and I'll be honest with you, I said cheese earlier but there's actually no cheese in this one. Not everything needs cheese. It's one of our most popular for a reason, and now you know why.

People always ask why I bother filling a baguette right out to the ends, and this is exactly why. When you bite into one of ours, I want that first mouthful to taste the same as the last, not a bit of dry bread with all the good stuff hiding in the middle.

So the chicken mayo goes all the way to the edges, then the rocket, then a proper crack of black pepper over the top.

I even put the gloves on for this one, mostly so the folks who like to have a go online can see the hands are clean either way. It's a simple baguette really, but the little things are what bring people back. Get one of these down you and tell me I'm wrong.

This is the bit nobody really sees, the end of the day when you find out how well you judged it. Today was a good one, barely anything left over, a couple of slices and a bit of onion and that's about it. Whatever's still good goes back out on the vans in the morning, and anything we can't sell but is still lovely I'd sooner take to the homeless than put in the bin. I hate waste, always have done. You check the lettuce hasn't turned, check the dates, and if it's still right then it lives to fight another day. Little wins like this are what keep a small business like ours ticking over.

Here's the part of running a food van that never makes it onto the socials, cleaning the grill down at the end of a shift. It's hot, boring work and you've got to be careful, because that steam will have the skin off your hands if you're not paying attention. But it matters more than people realise.

Once it's scrubbed back we put salt over the top, which sounds mad, but it brings the non-stick surface back so tomorrow's food cooks clean and even. Then plenty of water and it's ready to go again first thing. Nobody ever sees this bit, but every good baguette you get from us starts with a grill that was looked after the night before.
