First honey extraction of the season with Sally, whose hives are here on the farm 🍯

After uncapping the honey frames, the honey is spun out in a radial extractor, filtered through a double sieve, and tested for it’s glucose content before bottling.
The moisture reading was beautifully low on this batch, a sign of ripe, stable honey that the bees have worked hard to dehydrate and preserve naturally in the hive (they reduce the water content by fanning air through the hive before they cap the honey with wax🐝)

The spring forage has been rich this year, with the bees working across the water meadows, hedgerows and blossom. Dandelions, hawthorn, horse chestnut, lime trees and early wildflowers all feeding into the first harvest of the season 💛

Once bottled, the honey is very gently warmed to soften any natural crystallisation.

This batch will soon be heading into the vending machines!
