Are somewhere different today for a bit of a work based jolly but there is a reason and I'm Sure we will let more on as the day goes on but here a picture or two of where we are today.

A week with something new and something old.

The new, Midkight porter is well under way. Pumpkin, wheat and torrefied barley in the mash to give a smooth cream texture, spices and vanilla in the copper to give pumpkin pie flavours. If that does not give the flavour we are after then well do some FV additions to really drive the flavours and aromas.

The old, David in his brewing time was a bit of a hoarder/ collector. We started going through the mountains of old bottle label brew record and recipes, we have records for the 70s to the 90s, and decide we would have a go at brewing some of them. We have decided the first brew that we will have a go at is Ventnor premium ale ( VPA or Vipps). For the pump clip we have taken some inspiration from old bottle labels. We do not have any dates for this one as of yet but we are aim for this side of Christmas.

Final tasting of the dark side before its racked off in to cask
and its tasting great, well I think it is. all going to plan the dark side should be ready to head out to trade with in weeks if not sooner. As we enjoy a dark beer so much we have decide to brew another one, the test brew of midknight porter down well so we have brewed the porter on a larger scale.

Midkight porter is a pumpkin spice port with a good hit of vanilla. The name and pump clip are based around the ghost stories of Knighton gorges manor.

With autumn fast approaching, we are head to the best time of year for the dark beer styles. Darts side casks are weeks away from head out to pubs across the island along with the new designed pump clip. Brewing darks side at full length push the kit to its max with very little space in the mash tun.

As the brewery slows down we will be produce a few more one of brews for beer festival and pubs round the island. We have already been brewed two in the last week or so for some up coming beer festival, one of which is a pumpkin spiced porter.

Once these are out of tank we will be out pick some wild hops to make a foraged beer, maybe throw some blackberries in there two who knows.

Final we have something very exciting come to yates brewery, other than the new glass, but until it get here we don't want to say to much other than there could be some very one of beers coming.

Today in the brew we have some very active cask islander fermentation, so much that the spunding valve filled it self up, and maybe there is to much beet in the tank.

Spunding valves are used to apply a set amount of press or no press to a fermenter, as this is a cask brew there is no pressure applied. This can prevents oxygen from getting to the beer as it fermenters, which In turn can improve beer quality and stability. Another great thing about them is that they can help to prevent lose of volatile hop aromas and prevent formation of some esters, best know for it banana flavour in beers.

The pilot kit has been up to no good brewing a possible future keg product for Yates IOW Brewery / Yates IOW Wholesale / Cork Heads Wines & Spirits IOW, and its nearly ready. Again its a bit of a geek post this one.

The first two pin will be head down to Craft 101 - East Cowes, IOW and Craft 101 ale house with in the coming weeks, another cask maybe heading to a beer festival later in the year. A little about the beer.

The beer was heavy aroma hop and dry hops with the following hops,

Nectaron and New Zealand hop, delivers pronounced notes of pineapple, passionfruit, peach, and grapefruit.

Citra Aroma and Flavour Strong citrus, mango, passionfruit

Galaxy is often described as having a strong passion fruit aroma and flavour as well as blasts of clean citrus and peach.

To really improve the aroma we have used used a yeast strain with high levels of biotransformation, this would mean we should be able to increase the level of free thiols and in turn increase the aroma. this yeast is haze positive so this beer will have a haze.

To really drive the production of thiols we have also used phantasma powder, the dried skins of sauvignon blanc grapes.

Final a good amount of oats have been used in the mash to really improve the mouth feel.

Its just gone on chill and it smells like ripe mangos and pineapple, with citrus back notes. I'm really looking forward to getting out and drink this one. It should not be as cloudy in the image.
