Ideal - Hazy IPA 6.5% - Mosaic, Simcoe, and Citra.
Our vision of what an IPA should be. Light hazy yellow in appearance, it opens with aromas of green mango, tropical juice, peach, pineapple, and candied orange, with a layered fruit intensity that stays expressive without feeling heavy. On the palate it is smooth and rounded, with the tropical and citrus fruit aromas carrying through into a soft, juicy flavour profile. The fruit character remains consistent from start to finish, giving the beer a rounded and seamless feel. It finishes gently dry, with a bitterness reminiscent of green mango that keeps the beer from ever feeling too sweet.
The name says it all: this is our ideal version of a hazy IPA. It evolved from Sometimes Always, our main hazy IPA for the first five years of the brewery, and has been refined over time into what it is today. The bird on the label is the Barn Swallow, one of Catalunya’s most loved birds. Every year it returns to the same nest, a symbol of consistency, familiarity, and good fortune. It felt like the right match for a beer designed to feel steady, familiar, and easy to return to.
Sum Plum - Hazy IPA 6.2% - Strata CGX, Nelson T90, Nectaron, and Rakau.
This IPA is of a beautiful pale, opaque haze, brimming with bold aromas of sweet fruit and a bright zest. Silky and full on the palate, with juicy citrus flavours balanced by a herbal edge. The finish is dry and gently spicy.
In the birding world, "sum plum" is shorthand for summer plumage. It refers to the vibrant, colorful breeding feathers a bird grows compared to its duller winter coat.
