The Philippines is home to the most delicious corn. Simply boiled, coated in butter and salt - you have the ultimate snack.

It inspired us to make our chilli soy glazed corn, available on this menu as a small plate or makes a fabulous side for any main.

I took this picture in La Union on our last trip to the Philippines, we haven't been back since because it was a bit too tricky...at the beginning of 2025 I was heavily pregnant & this year, Joanie was starting nursery - next year January 2027 we will be travelling to the heartland for the first time as a family!

I am as excited as the lady in this photo - absolutely over the moon to be reunited with family and culture! WAHOOOO!

✨MANGO MAJA BLANCA✨

We made a panna cotta for some friends in the Philippines a few years ago for a dinner party, so they introduced us to it's Filipino cousin, Maja blanca, a similar dessert but made with coconut milk - naturally vegan & gluten free.

We top ours with luscious mango coulis toasted coconut & dried mangoes.
