As acidity is central to the balance of our flavour, we use a combination of historic and modern brewing techniques to ferment, acetify and age our own vinegars from grain to bottle. Our chillies are fermented for sev

eral weeks to enhance their flavour - This is an important part of the process, one that makes Balefire Sauces distinct. Balefire is an ethical producer. We minimise waste, single use plastic and ensure all our products are vegan friendly. All our containers are fully recyclable and we source the majority of our ingredients locally to reduce our carbon footprint.

A lovely fella asked me recently: "How do I get into artisan sauce making like Balefire?"
​Simple question. Not-so-simple answer.
​People often see the finished bottle on the shelf, but Balefire wasn’t built overnight. It’s the sum of a lifetime of obsession:
• ​15 years in professional kitchens: Learning how to balance flavours, master technique, and above all, handle food safely.
• ​Brewing & fermenting: Years of home brewing and working in commercial breweries taught us how to work with live cultures, stay resourceful, and actually scale production.
• ​Hitting the books: Digging deep into food science literature so I understood the theory before risking ruined batches.
• ​Media & photography: Having the background to tell our story, capture the process, and handle our own marketing.
​If you want to get into craft sauces, or anything creative, a great place to start is just pure dedication. It isn't an easy graft, but seeing our journey inspire other folk to give it a go is brilliant, and we’ll always champion budding makers taking the leap.
​Above all, you have to be obsessed with the craft. For us, this isn't just a job - it’s a way of life.
