Having a little dance while I’m cooking is honestly so therapeutic. πŸ˜‚πŸ˜‚πŸ˜‚

Just a man being my authentic self in the kitchen, music on, pot bubbling on the stove, moving around and enjoying the moment. Dancing while you cook is such a simple thing but it’s so good for your mental and physical health. If you’re cooking today, put on some music and move your body a little β€” your mood will thank you.

Today’s soup creation started by cooking down the vegetables first:

Then I added a creamy green base made from blended kale and coconut milk πŸ₯₯πŸ₯¬

Oil-free, fully plant-based, packed with vibrant vegetables, warming spices, plant protein… and finished with a touch of coconut milk for that silky, comforting richness.

🍲 Creamy Plant-Based Power Soup Recipe

🌿 Ingredients

* 1 red onion (chopped)
* 2 tomatoes (chopped)
* 2 spring onions (sliced)
* 3 cloves garlic (minced)
* 1 red carrot (diced)
* Fava bean protein chunks
* Baked portobello mushrooms (sliced)
* 1 cup kale + water (blended into green broth)
* Extra water for sautΓ©ing
* A touch of coconut milk (about ΒΌ cup)** πŸ₯₯

🌢 Seasonings

* 1 tsp ginger
* 1 tsp garlic coriander seasoning
* Β½ tsp turmeric
* 1 tsp pink salt
* 1 tsp chilli flakes
* 1Β½ tsp pimento seeds (allspice)
* 1 tsp oregano

1️⃣ Blend kale with water until smooth. Set aside.

2️⃣ In a pot, add a splash of water (no oil).
Add red onion, garlic, spring onions, and carrot.
Cook on medium heat, adding small amounts of water as needed to prevent sticking.

3️⃣ Add tomatoes and cook until soft and slightly saucy.

4️⃣ Stir in ginger, turmeric, garlic coriander seasoning, oregano, chilli flakes, pimento seeds, and pink salt. Let the spices bloom.

5️⃣ Add fava bean protein chunks and baked portobello mushrooms.

6️⃣ Pour in the blended kale broth. Simmer for 15–20 minutes.

7️⃣ Stir in a touch of coconut milk at the end for creaminess.

8️⃣ Taste, adjust seasoning, and serve warm πŸ’š
