π² Creamy Plant-Based Power Soup Recipe
πΏ Ingredients
* 1 red onion (chopped)
* 2 tomatoes (chopped)
* 2 spring onions (sliced)
* 3 cloves garlic (minced)
* 1 red carrot (diced)
* Fava bean protein chunks
* Baked portobello mushrooms (sliced)
* 1 cup kale + water (blended into green broth)
* Extra water for sautΓ©ing
* A touch of coconut milk (about ΒΌ cup)** π₯₯
πΆ Seasonings
* 1 tsp ginger
* 1 tsp garlic coriander seasoning
* Β½ tsp turmeric
* 1 tsp pink salt
* 1 tsp chilli flakes
* 1Β½ tsp pimento seeds (allspice)
* 1 tsp oregano
π©π½βπ³ Method
1οΈβ£ Blend kale with water until smooth. Set aside.
2οΈβ£ In a pot, add a splash of water (no oil).
Add red onion, garlic, spring onions, and carrot.
Cook on medium heat, adding small amounts of water as needed to prevent sticking.
3οΈβ£ Add tomatoes and cook until soft and slightly saucy.
4οΈβ£ Stir in ginger, turmeric, garlic coriander seasoning, oregano, chilli flakes, pimento seeds, and pink salt. Let the spices bloom.
5οΈβ£ Add fava bean protein chunks and baked portobello mushrooms.
6οΈβ£ Pour in the blended kale broth. Simmer for 15β20 minutes.
7οΈβ£ Stir in a touch of coconut milk at the end for creaminess.
