Bee 90 Honey has ran out of honey for time being.

Hopefully we are able to get a spring crop this year but as with anything involving farming it's all down to the weather.

All honey gradually forms sugar crystals as the honey sets. This is more prevalent with spring time honeys.

The three jars pictured show this transformation.
Clear, crystallising and finally our Soft Set honey*

Rest assured as honey crystallises it’s perfectly edible and can be returned to liquid with gentle warming; method on rear jar label.

*Our soft set honey is pure honey, nothing added or removed. All we do is use nice smooth, fine crystallised honey added to liquid honey to create our Soft Set honey.

It's that time of the year again.

The population ia exploding as the queen goes into full egg laying mode. Blackthorn and Dandelions is in fill bloom too with sun out.

The hives are getting busy and extra room is needed. We are adding additional boxes called Supers (Honey boxes) for the nectar to be stored and also reduce overcrowing.

Frame making

Spring is officially here and the sun made an appearance too.

So it's time to make frames for our beehives.

The wax frames are where the bees draw out the wax to house their brood, pollen stores and honey.

Periodicaly we provide them with fresh foundation (flat wax sheets) so they can make new wax cells. This helps with reducing the amount of patbogens in the hive and also wax gets dirty with all those feet!

Here are the wooden components, sheets of wax and nail gun to make them up. Labour & time intensive; perfect for box sets on the TV.

Happy St Valentine's day 💘

Legend has it that Saint Valentine was a beekeeper himself and had a great love for the creatures. He was known for his gentle and caring treatment of the bees, and it is said that he would often talk to them and bless them with his prayers.

Extravagant?

You would think so but after tasting this we now know some of our spring honey contains nectar from Sycamore trees.

Mono floral honeys are unusual in the UK so when the opportunity arises we purchase some so we can use it as a taste and aroma reference. Honey used for this purpose needs to be from a trusted source to guarantee authenticity and I feel most of us would trust Fortnum & Mason.

We purchased this jar on a quick shopping trip to London last weekend
