A good soup in my opinion is about using up all the things that are about to get wasted. At the weekend we had some leeks and a bag of potatoes that needed eating and having spent a very rainy Saturday day walking up at Gisburn, Sunday was a quick and easy day.
The classic leek and potato, always the first soup I make in Autumn after I apparently get too excited about eating leeks again for the first time in months, came to the rescue. It’s nothing fancy, simply leeks, potatoes, an onion, seasoning and beef bone broth, simmered before a quick blitz and a couple of tablespoons of double cream spooned through at the end. To go with it, homemade bread that I messed up slightly but was still delicious warm with a good spread of Netherend butter. Family fed, veg used up, job done.
Do you have a favourite recipe to use up your veg? I might make my parsnips into a cake 🤔 Good job our ground ginger was restocked last week!
Happy cooking everyone! See you in the real world 👋
