Our Winter W**es & Spirits selection isn't just about w**e, so this week we're pouring two spirits worth getting to know.

Lustau Solera Reserva Brandy is light amber, with vanilla, toasted wood and orange marmalade on the nose, dry and smooth on the palate with a long, nutty finish. Try it with cured cheeses, dark chocolate, roasted almonds or dried apricots.

Château Montifaud V.S. Cognac is fruity and floral, with pear and apple to the fore and a light touch on the palate. Lovely alongside herb-roasted chicken, a pear salad, or light honey pastries.

It's World Ch*****ne Day, so we've pulled together four of our current favourites, from easy-drinking to seriously special.

Gallimard Brut - £32.50 | 12.0% ABV | France Smooth and golden, with distinctive citrus and exotic fruit aromas. A great all-rounder with langoustine carpaccio, sushi or scallops in butter.

Gallimard Vintage - £41.00 | 12.0% ABV Golden yellow with a fine mousse, white flowers, lemon and brioche on the nose, candied fruit and honey through the finish. Lovely as an aperitif or alongside fish and white meats.

Taittinger Brut Reserve - £47.00 | 12.5% ABV Golden yellow with a fine, lingering mousse, light and delicate with fruit and brioche notes, and real depth and elegance on the palate. Perfect with canapés, smoked salmon or oysters.

Taittinger Prestige Rosé - £55.00 | 12.5% ABV Delicate salmon pink, with wild strawberry and a hint of spice, balanced and smooth with raspberry, cherry and blackcurrant on the finish. Wonderful with fruit-based desserts and selected cheeses.

Two fortified w**es worth having in the cupboard this winter.

Malamado Fortified Malbec is a soft purple, with over-ripened plums, dried figs and nuts, and a complex sweetness spiced with cinnamon and toasted almond. Serve with a cheeseboard or chocolate pudding.

Warre's Cavadinha 2010 Vintage Port is a deep, almost opaque ruby, with a signature floral, rose-scented nose alongside black cherry, plum, liquorice and tar. Full-bodied and refined, with a long finish of cocoa, dark fruit and tea leaf. Pair with blue cheese, aged cheddar or parmesan, dark chocolate, nutty desserts, or simply walnuts and dried fruit.

The top of our Winter W**es selection this month. Aged in oak vats, this traditional cuvée has real ripeness and richness, red fruit and spicy notes running right through it.

A beautiful expression from the southern Rhône. Purple ruby in colour, with an expressive nose of caramel milk, undergrowth and humus, leading into a spicy, full-bodied mouth with ripe tannins.

Try it with grilled or roasted lamb, beef daubes and braises, pork, pork belly, BBQ or a charcuterie board.

Two sister w**es from the Chocolate Box range this week, and both live up to the name.

The Shiraz is a deep garnet red with sandalwood, nectarine and roasted almond, layered with turmeric, praline and coffee, and a textured palate of powdery tannins and dark chocolate. Try it with rare roast beef, or pair it with a chocolate dessert.

The GSM is deep russet red, earthy on the nose with savoury oak, dark cherries and stewed rhubarb, then spice and cinnamon on the palate, finishing long and silky. A great match for game birds, venison, spicy pasta or lamb.

Two very different big reds this week, both worth getting to know.

Cerro Anon Rioja Reserva is cherry red with ruby highlights, complex on the nose and beautifully balanced on the palate thanks to its long time in the bottle. A natural with beef, pasta or lamb.

Crooked Mick The Legend Shiraz is deep, dark and intense, plum and cherry fruit meeting spicy white pepper, before chocolate, liquorice and crème brûlée notes come through. Rich, ripe tannins mean this one will age well too. Ideal alongside roasted red meats, hearty stews or a steak straight off the BBQ.

Next up in our Winter W**es lineup is a proper crowd-pleaser: soft, round and full-bodied, with plum, blackberry, cherry and chocolate all doing their thing, backed by soft tannins and a good structure.

It's young and fruity now, but give it a little time and it only gets more complex.

On the table, it's built for spicy pasta dishes, roast pork or beef, game, and full-flavoured hard cheeses.

Kicking off our Winter W**es selection with a rich Italian red made using the appassimento method, where the grapes are left to partially dry (withering) before pressing, concentrating the flavour.

Expect ripe, dried fruit character; think plums and raisins, with a gentle touch of oak bringing through chocolate and spice.

Pairs beautifully with roasted meats and game, wild boar and venison especially. Don’t worry if you haven’t got any of that on the menu, it's a great match for mature, savoury hard cheeses too.
