SHOUBUNSU is a long-established Japanese vinegar brewery with over 300 years of history in Okawa City, Fukuoka Prefecture, using the traditional method of static fermentation to achieve a mellow and fragrant taste.

The vinegar is brewed using a recipe passed down from father to son for 15 generations. The fermenting process is carried out inside a traditional Japanese Kura storehouse which has been around for more than 80 years.

The secret recipe is written in a scroll that only the eldest son of the Takahashi family is allowed to see!

Their Shoubun Pure Rice Vinegar, made through the traditional static fermentation method, allows for it to have a mellow, rounded acidity and smooth texture.

The Shoubun Sushi Vinegar is made only with brewed vinegar, sugar, salt, and kelp stock. It can be used in various dishes, from pickle chopped vegetables to sauces.

Shoubun Apple Cider Vinegar, made from domestically grown apples, had a mellow yet rich flavour. It can be used to marinate, as a dressing, and for many other purposes to one’s liking.

Yotsui Seimen Factory Co., Ltd., founded in 1919 in Usa City, Oita Prefecture, Kyushu, is an acclaimed noodle manufacturer often featured on television and magazines. The factory is located at the Usa Plain, which is the largest grain-producing area in Oita Prefecture; renowned for wheat and salt production, it is blessed with fertile soil, ideal climate, and abundant ground water.

The company is committed to the traditional production methods that date back to the Edo period, continuing to practice traditional sun-drying of noodles.

Their Yotsui Seimen Jukusei Udon has a wonderful chewy texture and excellent smoothness, whilst their Yotsui Seimen Himiko Soba is a flavourful dried soba noddle named after the ancient queen Himiko, which are both able to be served hot or cold and have a taste that cannot be achieved simply with machine drying.

The name “How are you?” was created by a famous Japanese composer Mr. Dan Ikuma (團伊玖磨), a distant relative by marriage to the Masuda family. One evening Mr. Ikuma and his wife were playing a game of idiom names in Kanji, and decided to name their favourite sake “把和游”. Since the name “把和游 (はわゆう Hawayu)” sounds very similar to “How are you” when read in English, Tsuki no Katsura adopted “How are you?” as the official brand name for this sake.
