Good morning folks. Here is a quick rundown of just some of the items we have in our Friday cabinet. All the specials will accompany the finest beef, pork & lamb available.

It’s been a stinker weather wise the last few days and it doesn’t look like it’s going to improve much. We’ve got some winter warmers and something a little different for your weekend treats.

❣️It’s the turn of the traditional beef lasagne this week. Made using minced shoulder & rump steak, fresh pasta & a creamy béchamel. As always there’s about 900g plus so approximately 2lb in weight. These don’t hang around folks

🇲🇽MEXICAN STUFFED CHICKEN….

You guys seemed to really like these and we had good feedback on them. They’ve been requested again for the weekend.

❣️A chilli & lime crumb coated boneless breast fillet stuffed with a chilli tomato sauce, cheese, pepperoni, salami, sour cream & salsa. It’s topped with a honey chilli drizzle and fresh lime. (1 fillet per tray)

❣️A 6oz steak burger laced with mozzarella and fresh basil. It has a tomato & basil glazed edge.

❣️A steak burger shaped nest that’s been dipped in a Boston BBQ crumb. The nest is filled with Big Mac sauce, mozzarella, white cheddar, Mrs Darlington’s relish and crispy onion (2 truffles per tray)

❣️Our traditional chicken schnitzels. Tenderised breast of chicken dipped in a traditional schnitzel crumb. Topped with a drizzle of honey chilli 🍗🍯🌶️

🍗CHICKEN KEBABS…

❣️Our kebab this weekend is honey chipotle. It’s one of my favourite glazes.🍗

🇲🇦MOROCCAN LAMB…

❣️Diced Ayrshire lamb marinated in aromatic herbs and spices for 24 hours prior to hitting the cabinet. The flavours will have infused into the lamb. It’s laced with red onions, spring onions and fresh chopped chillis.

This is a slower cooked dish so ideal for the oven or slow cooker. Pop in some tinned chopped tomatoes if you want to eke it out a bit.

❣️Diced white breast meat in a traditional sweet & sour sauce with peppers, onions, spring onions and pineapple

Again a slower cooked dish as the chicken is diced as opposed to stripped with our stir fry’s

Good morning folks, Friday again. A quick look at some of the items in our Friday cabinet. As always these will accompany your more traditional cuts of Ayrshire beef, lamb & pork.

▪️STIR FRY…

🔸Chinese beef
🔸Sweet chilli chicken
🔸Chicken & mushroom in black bean

▪️LASAGNE…

🔸It’s the turn of our Cajun lasagne folks. Made using only white chicken breast meat. Our creamy Cajun sauce is made using fresh Scottish cream. This is layered between fresh pasta and a Cajun flavoured béchamel sauce. Topped with mozzarella & white cheddar. Approx 2lb in weight 900 and odd grams in new money. If you want to share there’s plenty.

▪️BRAEMAR STACKS…

🔸We have a peppered beef steak mince patty, topped with our own black pudding and a sliceable peppercorn sauce. This is then topped with a puff pastry lid and bottom. Very popular last time we made them. Time consuming to make that’s why Mrs Mac has dodged making them😀(2 stacks per tray)

▪️BALMORAL STACKS…

🔸As above but we’ve swapped out the black pudding for a slice of our own haggis (limited numbers of the haggis ones)

▪️CHICKEN SCHNITZELS…

🔸A butterflied and tenderised boneless breast fillet in our Schnitzel crumb. Lovely on a plate with your favourite side. Add some tomato sauce and cheese for a chicken Parma. Or on a toasted piece of sourdough with some rocket, balsamic glaze and a squeeze of lemon

▪️BEEF STROGANOFF…

🔸A slower cooked dish for the oven or slow cooker. Diced Ayrshire beef with sliced fresh mushroom and onions in our stroganoff sauce.

▪️CHICKEN KEBABS…

🔸Spanish sunset.. a pretty new glaze. If you’ve had the sunshine chicken and liked it then you like these.

▪️FLAVOURED FLAT IRON STEAKS…
(Black truffle)

🔸We’ve flavoured our well aged flat irons in a black truffle marinade. We had these for dinner last weekend and they were delicious. Our son stripped the beef and had it in baguettes with melted mozzarella and said they were tremendous. (2 steaks per tray)

(Ready mid morning)

🔸Peppered pork fillet medallions in our own shop made creamy peppercorn sauce. This is then crumbled with our own recipe black pudding

🧡A special request as we’ve not made these in a long time. Our deep filled individual shortcrust pie shell filled with our own 4 cheese macaroni. It’s topped with mozzarella & white cheddar and a puff pastry lid.

Good morning folks. A wee look at some meaty treats we have in the cabinet today. A few ready made dishes etc.. to make life easier. These are just an accompaniment to our Ayrshire beef, lamb & pork.

As usual we will start of with our stir fry

🍜STIR FRY…

❤️Salt & chilli chicken
❤️Chicken & mushroom in black bean sauce

🇮🇹 CAJUN CHICKEN LASAGNE…

❤️Our creamy Cajun chicken made using only white breast meat & Scottish cream. Layered with fresh pasta and a Cajun bechamel sauce. Topped with mozzarella & white cheddar. Plenty to share…. if sharing foods your thing😀

🍽️WINNER, WINNER CHICKEN DINNER…

❤️We’ve not done this for a few months, so we thought we would give it a go as it sells well. A boneless breast fillet stuffed with hog roast stuffing (pork, apple & herb) This is wrapped in smoked back bacon and covered in a thick chicken gravy. It’s accompanied by everyone’s favourite… a large pig in blanket. This is a good sized dish so just add some roast potatoes & veg for a lovely tasty roast dinner

🇫🇷 🇷🇺 GARLIC BUTTER KIEV…

❤️A garlic herb crumbed boneless breast fillet with a garlic drizzle and a couple of pats of our own shop prepared garlic butter. Cook in the tray provided. Cover the dish in foil for 25 mins and remove the foil for the last 10 mins to let your crumb crisp up.

🇲🇦 MOROCCAN LAMB…

❤️Diced Ayrshire lamb infused with herbs and spices for 24 hours before we pop it in the cabinet. The lamb is laced with red onions, spring onions and fresh chopped chilli’s. This is ideal for the slow cooker or conventional oven. Some people are adding tinned chopped tomatoes to it and are loving it. Serve with rice or couscous and warm pitta. This does not hang around long folks.

❤️Our own recipe mini meatballs covered in a sweet chilli sauce.

🇮🇹CHICKEN ARRABBIATA…

❤️Diced white breast meat with peppers and onions in a chilli tomato sauce. Ideal with pasta or your favourite side. How about some lovely warm focaccia to mop up those juices. Again ideal for the slow cooker or oven.

🇨🇳 SWEET & SOUR CHICKEN…

❤️Diced breast meat, with onions, peppers & pineapple in an oriental sweet & sour sauce.

❤️A perfect accompaniment to a lovely aged steak or pop on some lovely buttered & toasted sourdough bread

Our shortcrust deep filled individual pie shells. Filled with steak, our own recipe haggis with our own recipe peppercorn sauce made using fresh Scottish cream

🔷INDIAN MYSTERY TRUFFLES…

🔺An aromatic spiced steak burger nest dipped in a tikka glaze. Filled with tikka sauce, oven roasted red pepper, our own spiced onions and sprinkled with an Indian paneer cheese (2 truffles per tray)

🔷GARLIC MUSHROOM CHICKEN GOUJON BAKE..

🔺Chicken mini fillets marinated for 24 hours in our garlic butter glaze. They sit on a bed of creamy mushroom sauce and the dish is topped with fresh sliced mushrooms, spring onions &
mozzarella

🔷BBQ PORK BELLY ENDS…

🔺BBQ glazed pork belly pieces dressed with a BBQ sauce. Tell us how much you want and we will pop it in an ovenproof tray for you. Stick it in the oven or AirFryer to crisp up for your BBQ pork burnt ends.
