Your slow cooker saviour for Sunday batch cooking. This flavourful chicken is a proper game-changer.
Make it once, use it all week. Perfect as a topper for salads, stuffed in toasties, or piled high on a bun for a flavourful burger. Fresh, bold flavours that work with everything.
Prep it at the weekend, sorted for the days ahead.

Slow Cooker Soy Chicken
Ingredients:
1kg boneless, skinless chicken thighs or chicken breast
3 crushed garlic cloves
6 tbsp soy sauce
3 tbsp runny honey
3 tbsp ketchup or sriracha if you like spice
1 tbsp rice vinegar
1 tbsp cornflour
Method:
1. If using chicken breast, cut it into chunks. Place the chicken in your slow cooker.
2. In a bowl, mix together the garlic, soy sauce, honey, ketchup (or sriracha), and rice vinegar.
3. Pour the mixture over the chicken, making sure it's well coated.
4. Cook on HIGH for 4 hours, or LOW for 6 hours, until the chicken is tender and shreds easily.
5. Once the chicken is cooked, take a tablespoon of the cooking liquid and mix it with the cornflour in a small bowl. Stir this back into the slow cooker and shred the remaining chicken.
6. Leave the sauce to thicken on HIGH for about 10 minutes.
Top tip: This keeps well in the fridge for 3-4 days in an airtight container. Freeze any leftovers in portions for up to 3 months and defrost overnight in the fridge when needed.
