We are seeking an experienced and highly motivated Head Chef to oversee all kitchen operations and uphold the standards that define our reputation.

Role Overview

The successful candidate will assume full responsibility for the management and performance of the kitchen. This includes leadership of the culinary team, maintenance of food quality and presentation, adherence to hygiene regulations, and effective control of stock and costs. The role requires a professional with strong organisational capabilities and a commitment to excellence in a fast‑paced environment.

Key Responsibilities
▪️Lead, supervise, and develop the kitchen team to ensure consistent performance
▪️Maintain high standards of food preparation, presentation, and service
▪️Manage stock levels, ordering processes, and supplier relationships
▪️Ensure compliance with all food safety, hygiene, and health regulations
▪️Monitor and achieve GP targets, cost control, and waste reduction
▪️Oversee daily kitchen operations, including scheduling and workflow management
▪️Contribute to menu development, seasonal specials, and quality improvements
▪️Foster a positive, efficient, and professional working environment

Candidate Requirements
▪️Proven experience as a Head Chef or Senior Sous Chef within a busy, high‑volume establishment
▪️Strong leadership skills with the ability to motivate and support a team
▪️Excellent communication and organisational abilities
Thorough understanding of food safety standards and kitchen compliance
▪️Demonstrated ability to work under pressure while maintaining quality and consistency
▪️Competence in stock management, budgeting, and cost control
▪️A professional, reliable, and proactive approach to all aspects of kitchen management

I’ll tell you this for free…it’s faaaar too warm to be baking in this heat 🥵
Poor Shona will be sweltered in her kitchen making sure all your favourite bakes are in the vendy….that’s if she wasn’t off for a (very well deserved) few days enjoying the sunshine with her family. Luckily for me (perhaps not so much for yous 😜) that means I get to roll up my sleeves and get baking in front of a really hot oven on a really hot day 😆 because no matter the weather, you all still love a cake and a milkshake, apparently 🙏🏼
Thankfully, Shona has left me the Holy Grail of baking books and I think it’s fair to say I knocked the banana & chocolate loaves (chocolate ratio may be questionable but I’ll know more when it’s cooled and sliced) and cookies -white chocolate chip/milk chocolate chip/honeycomb/magic stars - out the park.
It begs the question, is it the baker or the book? It’s just a bit like science isn’t it?…I was never that good at science! 😜

I couldn’t help myself…
Young Olivia turns 9 today and yesterday she had an inflatable splashdown party at the local swimming pool to celebrate. Papa, to wind Olivia up, asked yesterday morning what time the party started, knowing fine well when it did, so he could come and join in. Olivia, not wanting Papa to cramp her style (and assuming he was on the wind up) told him 6pm - 2 hours after the actual party started and an hour after the leisure centre closed.
Cue Chatgtp…Olivia’s face was a picture!!

Feeling slightly nostalgic this Tuesday morning 🙃
With these 4 wee toppers making their way to Ayr Mart this morning, this marks the last 4 calves to ever be reared in our original calf sheds (one of which was the old 7 stall milking byre - those were fun days! 👀). The sheds that have been in action for decades and seen thousands of calves reared in them and probably even more sweary words 🤣. This now leaves these sheds redundant and my head is absolutely buzzing with ideas of how we can utilise them 🤔
The end of an era, perhaps, but possibly the start of a new one?..
