Endurance athlete Caroline Livesey - Elite Triathlete is taking on the North Coast 500 this June, aiming to complete the 516-mile route in under 35 hours to raise money for Peak Education Nepal

A test of endurance, focus and determination, on some of the toughest roads Scotland has to offer.

The current record is 36 hours 39 minutes which Caroline is aiming to beat.

We’ve provided some Stockan’s Oatcakes for Caroline and her team to take on the road 🌾
