While out picking green pinecones with the only container to hand being a tophat(!?) i came across a lurid bolete and several bee orchids! Carrying on i came across a lizard orchid! Something ive never seen before! Not in flower so will be popping keeping an eye. Will try and post a pic when it does.

Linden flowers were infused with gin last year now theyve had a second infusion with beech leaves to make what i call ‘Noyau’. It tastes fruity, herbal, perfumed. With ice and lemon its real good. First time doing it with linden flowers.

Green pine cones. Often miss the wi dow to fet these as you have to find a oine tree with low enough hanging branches to puck. I susually cook in a sugar syrup via method. This time opted for mixing with equal quantities of sugar alla and . Its called ‘Mugolio’, the sugar dissolves and the whole thing gently ferments which, i imagine, will bring out a more complex flavour. Still places on my foraging alldayer this saturday 7th june.
