Bogrow Farm is a small family run livestock farm near Tain. We raise sheep, cattle and pigs and have an in farm butchery from which produce delicious charcuterie.
Upper Bogrow is a small 90 acre farm in Easter Ross, Scotland run by Caroline and Alec Matheson and our two children. We produce lamb and pork on a small low intensity system. We produce delicious cured meats in our on farm butchery.

✔️There are some meat trimmings that don’t make the grade for our salami but dogs love it. Our dogs will attest to that!
✔️So we are looking to bring tasty treats to more dogs by making this available to our customers.
✔️We are hoping this will result in more happy dogs and reduce the waste from our charcuterie production.

Today is all about harvesting. We regularly weigh our culatello and Coppa and when they have lost at least 60% of their starting weight we peel off the casing and pop them in a vacuum bag. Whilst in the vacuum bag the moisture can equalise across the whole muscle and the flavour develops further. #freerangepork #scottishcharcuterie #gloucestershireoldspots
Today was all about whole muscle salumi. About 60kg in total. These Spicy Coppa and Culatello weigh 3-5kg each. They have finished salting and are now wrapped up and ready for drying and maturing in the ageing room. All being well we will be ready to slice them later this year. #scottishcharcuterie #freerangepork #gloucestershireoldspots
