Bogrow Farm

Bogrow Farm Bogrow Farm is a small family run livestock farm near Tain. We raise sheep, cattle and pigs and have an in farm butchery from which produce delicious charcuterie.

Upper Bogrow is a small 90 acre farm in Easter Ross, Scotland run by Caroline and Alec Matheson and our two children. We produce lamb and pork on a small low intensity system. We produce delicious cured meats in our on farm butchery.

Are you interested in feeding your dogs a more natural diet?

✔️There are some meat trimmings that don’t make the grade for our salami but dogs love it. Our dogs will attest to that!
✔️So we are looking to bring tasty treats to more dogs by making this available to our customers.
✔️We are hoping this will result in more happy dogs and reduce the waste from our charcuterie production.

We are in the process of working out the range. To start with we have:

🦴Venison mince £5.75/kg
🦴venison bones £4.90/kg
🐖Pig trotters - 4 per pack £4.95
🐖Pigs ears - 2 per pack at £2.95

Today is all about harvesting. We regularly weigh our culatello and Coppa and when they have lost at least 60% of their starting weight we peel off the casing and pop them in a vacuum bag. Whilst in the vacuum bag the moisture can equalise across the whole muscle and the flavour develops further. #freerangepork #scottishcharcuterie #gloucestershireoldspots

Today was all about whole muscle salumi. About 60kg in total. These Spicy Coppa and Culatello weigh 3-5kg each. They have finished salting and are now wrapped up and ready for drying and maturing in the ageing room. Great Taste Awards 2021 - Spicy Coppa - judges’ comments

⭐️Wonderful looking pork with an excellent ratio of fat and meat. Fabulous texture. The cure has been excellently handled to give both savoury and sweet notes but the pork still has the star role with the well judged spicing giving complexity and length to this well made product.⭐️

⭐️Attractive looking slices of coppa with a good ratio of meat to fat. The texture was soft, smooth and creamy, and melted in the mouth. Whilst the paprika notes sat in the background this didn't detract from the delicious well balanced flavours we experienced.⭐️ #greattasteawards #scottishcharcuterie

After a fantastic year which saw record numbers of products from our fantastic producer members and a great review process which involved nearly 1000 individual product reviews being undertaken, the results are in! There will be much more to follow, including full listings, the announcements of overall best reviewed product, the highest rated overall producer with the largest number of best reviewed products and of course, the putting together of our panelists selection ‘Ultimate Charcuterie Board 2021’ which will all follow shortly. To kick the results announcements off – Here are the review panelists top 10 in each category. We would like to offer once again a huge thank you to our headline sponsor Angel Refrigeration Ltd as well as our other sponsors and partners, Bizerba & British Pig Association, with whom we look forward to collaborating on many more exciting new events and projects.
