Tain Market 19th August

It’s been a busy week topped off by the salami cabinet controller blowing up 💥💨 yesterday just as I was about to put in 160kg of salami. I’ve hopefully managed an old school way to still ferment the salami and not have to chuck it out.
It does mean however I haven’t even started preparing for Tain market tomorrow. So sorry folks we are going to have to give this one a miss.

It is Black Isle Show time already. We will be there with our charcuterie Wednesday and all day Thursday.

Alec and Ella did some training with the ponies today. In the past Highland Ponies were often used to carry deer off the hill. Some places still use them and it’s good to keep these skills going. Breagha (4) was a little bit unsure but was soon came round to it. Eilidh (9) took it all in her stride.

We have four Gloucestershire Old Spot sows. They live outside all year round and also give birth in their pig arks (usually). Sometimes they like to be alfresco! We used to fret and try and get them into the shed but they really weren’t keen so now we just leave them to do what they know is best. In the last week two have a given birth to around 20 piglets between them.

⭐️. PORK ⭐️

Most of our charcuterie is either made entirely from pork or contains some pork. So it’s important to us to use only the best quality pork available to us. That means raising our own so we know exactly how they’ve lived and what they’ve eaten.

🐖We keep a herd of pedigree Gloucestershire Old Spot pigs.

🐖They all live outside 99% of the time only going into a shed for a short time at weaning or if we have concerns about their health due to illness or weather conditions.

🐖So far we have found pigs to be very healthy animals and we rarely need to give them any antibiotics or wormers.

🐖Living outside on pasture means the pigs can get plenty of exercise, fresh air and dig and root for roots and insects as much as they like.

It costs twice as much to produce as indoor intensively reared pork but we think it’s worth it.❤️

Great to see this collaboration with Ardgay Game.
Venison is so versatile and should be more widely eaten. We use it instead of beef in our mince and tatties, lasagne, bolognese etc.

We are delighted to announce our partnership with distinguished Scottish wild venison and game supplier Ardgay Game. In our efforts to expand our work across Scotland, Ardgay Game have donated 300kg of minced venison to be turned in 2,400 meals to be donated in the locality of the Highlands.

To sustain this important endeavour, we are actively seeking additional donations and deer carcasses, which will be processed free of charge at the Ardgay Game site in Bonar Bridge. Meals created from the donated deer in the Highlands will be returned to benefit local communities, fostering a self-sustaining cycle of support.

I’ve always enjoyed listening to the birdsong on my morning dog walk but never really knew which birds I was listening too. So I was delighted to find out you can download an app from Cornell Lab of Ornithology that listens to the bird song and works it all out for you. (Thank you Joyce Campbell )

In one short walk it identified 19 different birds. One sound I had always thought was an insect turned out to be a bird - the Commuom Grasshopper Warbler!

Here’s one of the recordings.

Day 3 of month calls for our favourite view from the farm. It is so easy to stop appreciating where we live when we get caught up in our busy lives. So here are some pictures of the views we enjoy here at Bogrow Farm.

We look over towards Beinn Tharsuin from the house and at the North end of the farm we can see towards Ben Klibreck.

It's month and it's time to to visit Scotland's farms and crofts for food, drink, great days out or for a farmstay!

Hello from Bogrow Farm a small livestock farm near Tain, north of Inverness. We raise free range Gloucestershire Old Spot pigs, Luing Cattle and a small flock of sheep.

We have an on farm butchery where we make small batch charcuterie from our pork, beef and wild local venison.

For the next month there will be loads of information on farmers and crofters the length and breadth of Scotland showcasing their businesses!

The Charcuterie Board Summer of Charcuterie 2021 Results!

After a fantastic year which saw record numbers of products from our fantastic producer members and a great review process which involved nearly 1000 individual product reviews being undertaken, the results are in!

There will be much more to follow, including full listings, the announcements of overall best reviewed product, the highest rated overall producer with the largest number of best reviewed products and of course, the putting together of our panelists selection ‘Ultimate Charcuterie Board 2021’ which will all follow shortly.

To kick the results announcements off – Here are the review panelists top 10 in each category.

We would like to offer once again a huge thank you to our headline sponsor Angel Refrigeration Ltd as well as our other sponsors and partners, Bizerba & British Pig Association, with whom we look forward to collaborating on many more exciting new events and projects.

A big thank you to our wonderful panelists, who spent the summer not only tasting a variety of amazing cured meats, but also took the time to provide detailed feedback and their review scoring, for which we are hugely grateful.

Finally, we would of course like to thank the exceptionally talented, hard working, independent producer members of The Charcuterie Board who provided all of the delicious produce, upon which the largest UK consumer charcuterie review ever undertaken is based.

Full listings, scoring data and comments will be provided to each of the entrants in what we hope will be invaluable feedback, helping them develop their range, target their marketing and continue to raise the bar for UK cured meats at such an exciting time for the industry.

Well done to everyone who took part!
