This recipe is wonderful for coughs and colds.
I have used it for years.
Simple
In about the month of September the elderberry grows everywhere.
Unfortunatly if you haven’t picked the berries you will need to wait until next year.
Or I have some simple ideas that help and will not cost as much as the products on the market.
If you have the berries you remove them with a fork trying not to have any green berries ( not good for you)
Place in a saucepan, as many as you want and cover with water. The more the merrier as these are you bit C pop and antioxidants.
If you have loads of berries just freeze.
Bring to a steady boil for 3/4 mins and then simmer for 15/20 mins. Turn heat of and rest. You can add honey while hot, stir in a good amount and you could add 1 or 2 cloves ( not too many as very strong in taste). Stir until everything is mixed.
You can leave this overnight or start the process.
Sieve the goodies and you will have a beautiful purple liquid. I use Muslim or a clean tea towel as you can get all the juices. Wear gloves if you don’t want stained hands.
Prepare old jam jars/ bottles/ ice cube containers.
All jars pop in pre heated oven ( 180) for 5/10 mins.
When slightly cooled slowly add liquid. The jar needs to regulate it temp or it will crack so add a little at a time. Fill to the top. Add the lid. Leave to cool.
Medicine that is so good for winter bugs.
I give the kids it in hot water with some extra honey ( local) and Lemon. All organic if possible but if you cannot do this just wash your lemon. Just like ribenna but soooooo good for you.
You can put in ice cubes and use one with hot water or even two cubes.
If you don’t have any berries you can go to a herbalist shop like Neil’s Yard and buy some dried. Soak for ages in hot water. Not as good and more expensive.
Be adventurous and add fresh grated ginger to your warm liquid before sieving.
It’s the best.
