Need a little Monday inspiration? What about this BLUE CHEESE & MUSHROOM SPAGHETTI?

Ingredients:

1 x medium sized onion chopped
2 x garlic cloves finely chopped or crushed
Spaghetti
Mushrooms (lots) roughly chopped, I like Chestnut mushrooms
Portion of blue cheese (go for more rather than less)
A splash of rapeseed oil
Chives finely chopped (optional)
Salt & Pepper

Method:

1. Heat the oil in a big frying pan or wok and add the onion. Fry for a few mins until translucent.
2. Put the spaghetti into salted boiling water. Boil for 5 mins (even if the packet says to do it for longer – DON’T). It will cook a bit more when it is added to the sauce and you don’t want claggy pasta. When you drain it, retain some of the cooking water and just set to one side.
3. Add the mushrooms to the pan and cook for about 5 mins or until they have started to brown. Don’t be afraid of a high heat.
4. Then add in your garlic and cook for 2 mins.
5. Add in a couple of ladles of the pasta water (you can always add more later).
6. Crumble in your blue cheese and combine it all together so that blends to make a lovely luscious sauce. Add in a generous amount of salt and pepper.
7. Add in your spaghetti and combine it all together until it is hot and nicely covered with sauce.
8. Give it a taste, add salt & pepper as required, then sprinkle on your chives and serve.

Added Ideas:
• I had a bit of leftover grated cheddar in fridge so I bunged that in too. Don’t be afraid to mix up the cheeses – although for this dish I prob wouldn’t use brie or camembert.
• This is a veggie version but if you want to add in some meat then what about some streaky bacon or pancetta? Just fry that up before adding in the onion.
• This can be eaten on it’s own but is also nice with a crisp salad with a tangy dressing.

It looks much flashier than it is. Goats Cheese Crostini on leaves. A super easy & quick starter if you’ve got people round.

1. Just slice a French stick. Toast in oven with a drizzle of oil & rub of garlic.

2. Then smear some pesto on them (shop bought or homemade 🤷‍♀️), and generously spread some soft goats cheese on.

3. Dress some leaves in a balsamic dressing, pile on plate and pop 3 slices on top. Drizzle with a bit of balsamic glaze.

Super easy, super yummy 😋.

Here is the recipe for the Potato Cakes:-

Ingredients:

6 large potatoes (this will do about 12 patties), or leftover mash
Large nob of butter
2 x tablespoons of milk
3 x tablespoons of plain flour
Bunch of chives finely chopped
Rapeseed Oil
Salt & Pepper

For topping:

1 x red onion sliced
Lots of slices of cheddar (the more the merrier IMO 😁)
Slices of ham (as much as you want)
Slices of Chorizo

NB: Other nice options are bacon instead of ham, and brie instead of cheddar. Feel free to mix it up.

Method:

1. If you’re making the mash, peel and chop the potatoes, then cook in a large pan of boiling water for 10+ mins until they can be easily pierced with a knife. Drain and leave the potatoes in a colander to steam-dry.

2. Then mash potatoes, add the butter & milk, a good amount of salt and a bit of pepper. Then add the chives and taste, adjust seasonings as required. Then add flour, combine and leave to cool (its much easier to do the next bits when it’s cold).

3. Roll the mash mixture into balls.

4. Heat some oil in a large frying pan. Add the balls and flatten with a spatula so that they are disc shaped. Fry for 2-3 mins on each side until golden. You’ll need to do this in batches. Just set aside on kitchen roll until ready to use.

5. Assemble the toppings (as in pics), put on a baking sheet and put into a preheated oven (180 degrees) for 15-20 mins.

I served with a crisp white cabbage salad with a tangy balsamic dressing, and some of my own homemade spicy chutney. Enjoy 😍.

SCRUMPTIOUS SAUSAGES! The Monday night meal has got to be one of the least inspiring of the week … back to work after the weekend … it’s all a bit bleugh frankly 🤷‍♀️.

This is the perfect antidote. So yum and very little effort 👏. It’s a Jamie Oliver recipe & was introduced to me by a lovely family member. I’m not sure I’d have bothered with it otherwise as it’s hard to believe quite how tasty it is given its simple nature! Give it a go.

Tartiflette - potatoes, loads of leftover cheese (Camembert, Stilton, goats cheese) bacon, onion and garlic. Served with crisp salad. Bit full now as had 2 helpings!

Here is an easy weekday supper - Creamy Veggie Pasta. Can always jazz up a bit by adding chicken, bacon or chorizo (I just didn't have any when I made this!). Oh & fresh chilli - just swap basil for coriander.
