Mash day at the distillery. The barley comes from Crisp Malt and is grown by farmers mainly across the East of Scotland. We use Crushed Scottish Pot Still Malt which has never let us down and gives that award winning taste to our vodka. It's the first part of a long process, and one of the best/worst mornings of the week.

It's the day after distilling. Now we start proofing our Scots Pine Gin down to 40% — slowly, over two weeks. Any faster and the oils agitate which is called louching.

The forest smells like the gin before it's the gin.

This is Tentsmuir Forest — a few miles from the distillery, and the place that inspired our Scots Pine Gin. The scent of the resin, the stillness, the particular quality of the air on a cold morning.

Three-star Great Taste, and described by judges as having "the clarity of a cold morning in the forest." We think they captured it well.

No shortcuts, no concentrates, no flavourings. Just a very specific sense of place, and an honest attempt to put it in a glass.
