The Criterion has been pouring in St Andrews since 1874. For the pub's 150th in 2024, Steve and Hazel wanted a house gin that was actually theirs β€” so we distilled one in Tayport. Two years on it's still what Fraser pours behind the bar.

The next video in our series is about this gin and our relationship with The Criterion, who have backed us for years. Ally walks through the botanicals back at the distillery, and Duncan and Steve talk through how the two businesses found each other.

Andy Husband's great-grandfather bought East Adamston in 1947, and the family have been fruit growers ever since β€” raspberries, blueberries, and blackcurrants for the last 35 years. Our blackcurrant liqueur started with Andy and one crate of those blackcurrants. This is the farm where it began.

This is our trusty hydropress which fills with water, the bladder blows up and pushes the blackcurrants against the cage β€” juice out, skin left in. That's the step between maceration and bottling our Blackcurrant Liqueur here in Tayport, Fife.

Our raspberry liqueur is made with raspberries from farms across Fife, and the story started at Barnsmuir Farm in Crail with Tim Stockwell. We were there earlier this year getting shown around and here are a couple photos from our visit showing the coast at Barnsmuir Farm, raspberries being picked, and us catching up with Tim.

After two weeks of maceration the fruit's flavour moves into the liquid while the alcohol moves the other way, into the berries β€” that's why we press it back out. Full video up now, start to finish.

Most vodka is made from wheat or potato. Ours is made from barley β€” the same grain Scotch whisky is made from.
