Yam Cha Pa (Northern Thai Forest Tea Salad)
A unique Lanna delicacy from the mountains of Northern Thailand, Yam Cha Pa combines young forest tea leaves with fresh herbs, vegetables, and a spicy, tangy dressing. Traditionally enjoyed by tea-growing communities, this vibrant dish celebrates the connection between food, nature, and wellness.
The young tea leaves provide a delicate earthy flavor and natural antioxidants, while the fresh vegetables and herbs create a refreshing balance of textures and tastes.
Simple Yam Cha Pa Recipe
Ingredients
2 cups young Cha Pa (forest tea) leaves
1 cup shredded cabbage
1 carrot, julienned
2 shallots, finely sliced
2 red chilies, chopped
2 tbsp roasted peanuts
1 tbsp toasted sesame seeds
Fresh herbs (mint, coriander, or local mountain herbs)
Dressing
2 tbsp lime juice
1 tbsp fish sauce (or soy sauce for vegetarian option)
1 tsp palm sugar
1 tsp chili flakes
Method
Lightly blanch or steam the tea leaves for 1–2 minutes and cool.
Combine tea leaves, vegetables, herbs, and peanuts in a bowl.
Mix dressing ingredients until dissolved.
Toss everything together and serve immediately.
Fresh, nourishing, and deeply rooted in Northern Thai tea culture.

Cha Pa Forest Tea Picking – Northern Thailand
Hidden within the misty mountains of Northern Thailand, Cha Pa Forest Tea grows naturally among native trees in ancient forest ecosystems. Unlike commercial tea plantations, these tea bushes thrive in biodiversity-rich forests, where they absorb nutrients from the surrounding environment and develop complex, distinctive flavors.
Tea picking is still carried out by local hill tribe communities using traditional methods passed down through generations. Harvesters carefully select only the tender young leaves and buds by hand, ensuring the highest quality while preserving the health of the tea plants.
The process is more than agriculture—it is a deep connection between people, forest, and culture. Early mornings often begin with harvesters walking through cool mountain air, gathering fresh leaves that will later be transformed into aromatic teas known for their smooth, floral, and earthy characteristics.
