Loved hearing this feedback from one of my recent cooking class guests!

Indian Masterclass - Authentic Indian Cooking

I recently attended an Indian cooking class and it was an absolutely brilliant experience. From the moment I arrived, the teacher and her husband were incredibly friendly and welcoming, which immediately put everyone at ease.

The class itself was very well structured. We were guided step by step through preparing several authentic Indian dishes, learning not just the recipes but also useful techniques and tips along the way.

The teacher was extremely knowledgeable and explained everything clearly, answering questions and offering help whenever needed.

Her husband was also on hand throughout, making sure everyone was comfortable and keeping things running smoothly.

What I liked most was how hands-on the experience was. We all got fully involved in the cooking, rather than just watching, which made it both fun and really rewarding.

The atmosphere was relaxed and enjoyable, and it felt like a great mix of learning and socialising.

Overall, I would highly recommend this class to anyone interested in Indian cooking, whether you're a complete beginner or already have some experience. It was not only educational but also a genuinely enjoyable experience from start to finish.

Curry club is a great space to learn to cook with me in real time, we cook together once a month, through zoom.

You learn to cook authentic Indian recipes in the comfort of your home kitchen, knowing I'm there to guide you and you can continue to cook beautiful curries and all the trimmings in your own time.

Tandoori soy spiced chicken

For a veggie option, try using paneer or tofu or even a selection of your favourite vegetables, slices of aubergine in this marinade are delicious

750g of chicken, preferably skin removed, bone-in and thigh or drumsticks – please slash if it’s big pieces so it takes on marinade and cooks quicker

2-3 garlic cloves, peeled and finely grated
½ inch ginger, peeled and finely grated
3 tbsp soy sauce
Juice of half a lemon
1 tbsp tandoori masala
1 tsp sugar

Mix the marinade and cover place over your prepared chicken.
Cover and pop in the fridge for at least 30 minutes or overnight in the fridge.
Bake in a hot pre-heated oven at 190°C for 30-35 minutes until fully cooked or part cook in the oven and finish on the barbeque.
Serve with salads and a naan or your favourite way!

Here's a prep set from last week.

When teaching you guys to cook, we prep the ingredients do we can fully concentrate on the spicing.

You can't just add a heap of spices to a pan and expect them to deliver great flavour.

Spices need heat, they need liquid, they need to be teased, so they release their beautiful oils, to bloom before we even start to make a curry.

Home cooking is healthy, affordable, the gift that gloriously keeps on giving.

It's been a busy weekend with a demo at the Allergy and Free From Show on Saturday.

I delivered a cooking class of Indian small plates for the Veg Society in Manchester on Sunday.

The highlight was meeting Sam to shop and eat a lovely meal, too.

Today has been Curry Club Cookalong planning. We are making lamb rolls (think lamb somosas, baked in a roll), with potato chaat, sticky mango skewers and a slaw - the theme is picnic, meet us on Sunday at 4.00pm in your kitchen, via zoom but you will need to get in touch, if you'd like to join us.
