Cider tastes better by the sea. Fact.

A few Nightingale cans made the trip down to the shores of Dungeness, with Pippin on hand for some very important beach supervision.

We're hiring! We're looking for a Production & Operations Assistant to join the Nightingale team.

We’re looking for someone to join our small team, helping us make and get our award-winning ciders out into the world.

It’s a hands-on, genuinely varied role, from pressing fruit and packing orders to making deliveries, with scope to get involved in events and cellar door work as we grow.

Would suit someone based in or around Tenterden, Kent.

What You'll Be Doing:

· Cidery: harvest and pressing, cellar work (transfers, rackings, gravity/temperature/pH readings) and Clean-in-Place hygiene routines
· Packaging and dispatch: bottling, canning, kegging and bag-in-box lines, plus picking, packing and getting orders out the door
· Deliveries: local and regional trade drops in our van, keg collections and returns
· Events and cellar door (future scope): nothing is scheduled at the moment, but as we grow we expect this role to cover setting up and running our stand at markets and festivals, serving customers and talking cider, plus cellar door and tasting room work

Days are flexible and agreed with you, but we'll need you up to 5 days a week through harvest, when things get busy. If events come on stream, some evening and weekend work would come with them, always planned with you in advance.

Who We're Looking For:

Physically fit and happy working in wet or cold conditions. Good mechanical aptitude and a valid, clean UK driving licence are essential. Above all we want someone adaptable, who's as happy on a mucky pressing day as they are dealing with a trade customer on the doorstep.

Experience in a brewery, winery or food production setting, a forklift licence, HACCP knowledge or bar/event experience are all welcome bonuses, but we'll train the right person.

The fruit is a little smaller, but sugars are high, which is normally a positive thing for a great vintage! We're very excited to see how it tastes.

Partial eclipse of Discovery 🌘🍎

We’re keeping a close eye on our Discovery apples as we wait for the right moment to pick.

Alongside measuring Brix, we use an iodine solution to check how much starch remains in the fruit. The iodine turns blue where starch is still present, creating these rather lovely eclipse-like patterns.

As the apples ripen, that starch converts into sugar and the blue gradually disappears. When there’s very little blue left across our samples, we know the fruit is getting close to harvest.

It was our first time there, and we loved pouring our ciders in the East Sussex sunshine, catching up with friends and meeting plenty of new ones.

Enjoy Night Bird (and a spot of kayaking) at Lime Wharf Cafe in Rye 🍎

Sam, Kim and Pippin recently paid a visit to Lime Wharf Cafe, where they spent the day kayaking along the River Rother before stopping off for a well-earned pint of Night Bird. It was also Pippin's very first boat trip, and she took to it like a pro.

Lime Wharf Cafe shares its beautiful riverside site with sister businesses Bodiam Boating Station and Riverside Cottage Camping, making it the perfect destination to enjoy great food, camp, hire a boat and enjoy a pint of Night Bird.

We recently spotted Night Bird and Wild Disco on the shelves at our local Co-op in Cranbrook.

Fledgling No.6 has landed 🦅

Our first Fledgling release in two years, Fledgling No.6 pét-nat is made from Discovery and Redlove apples. Made in very small quantities, this is one for the cider enthusiast.

With aromas of strawberries and cream combined with cherries and red berries. The palate is juicy and thirst-quenching, balanced by bright gooseberry acidity. Fresh, vibrant and wonderfully refreshing.

This is a limited release, so be quick to grab a bottle!
