This is what slow curing actually looks like...

Not machines. Not shortcuts. Not rushing the process.

Just quality meat, carefully prepared and given the time it needs to develop flavour and texture naturally.

It's not the quickest way to make food, but we don't think great charcuterie should be rushed.

Because when you start with good ingredients and give them the time they deserve, the results speak for themselves.

We've built a lot of boards over twenty years so here's our take on what actually belongs on a great one!

✅ Proper charcuterie: the foundation, non-negotiable
✅ At least two cheeses: one hard, one soft
✅ Good pickles: the sharper the better
✅ Something crunchy: crackers, breadsticks, whatever works
✅ Something sweet: grapes, fig jam, a good chutney
❌ Too much of any one thing
❌ Anything that needs reheating (this is a board, not a kitchen!)
