Distillery tours, tastings and shop on site Wolfburn Distillery makes Highland single malt Scotch wh**ky in Thurso, Caithness, and is the most northerly distillery on the Scottish mainland. The original Wolfburn was founded here in 1821 and became the largest distillery in Caithness before falling silent in the mid-1800s. In 2013 we brought it back to life, close to the original site and drawing water from the same source, the Wolf Burn. Everything is done by hand, from milling to bottling, with no automation. Long fermentation, slow distillation in copper pot stills and years in our dunnage warehouses by the sea give Wolfburn its fruity, smooth and well-balanced character. Every bottling is non-chill filtered, natural in colour. The range includes the 10 and 12 Year Old, 8 Year Old Northland, Aurora, Morven and Langskip, alongside limited releases like our Madeira Cask Finish. Want to see it for yourself? Morven’s palate opens up floral, soft and easy, before raisins and light spice take over and honey carries it home. 🥃

Ten parts per million of peat, and somehow it still finds room to be delicate.

Maple syrup, almonds and dark chocolate come straight off that first-fill bourbon cask wood, with fruit blossom, dried apples and light oak on the nose behind it. 🥃

A few drops of water and it rounds out properly, more fruitcake, more maple, less heat.

The original Wolfburn, back in the 1800s, heated its kiln on peat smoke. Morven is the closest thing in the range to that memory. 🥃

Smoke first, with fresh sea air, vanilla and oak right behind it. Then raisins and light spice take the palate, soft honey sweetness underneath, and the finish lets the peat linger.

Ex-bourbon barrels and quarter casks sourced from Islay. Ten parts per million, and every one of them earns its keep.

The 12 Year Old was made about as far from a wh**ky tourist trail as you can get on the Scottish mainland, and that’s the point. 🐺

Twelve years, equal parts Oloroso and ex-bourbon, all of it done in Thurso, by hand, the way it was meant to be done back in 1821.

Turns out that approach wins awards. We’ll take it!

There are 2,982 bottles of the 12 Year Old Madeira Cask Finish, and every one of them passed through the same three pairs of hands.

Every bottle was filled, labelled and packed by hand in the bottling hall at Thurso, over a couple of days.

We are a small team and the wh**ky never leaves our hands. Distilled, matured, bottled, and shipped from here to the rest of the world.

The wh**ky waited twelve years. The bottling took two days. The casks tend to get all the credit, so this one is for the bottling hall.

Freshly cut grass and autumn fruit don’t usually turn up in the same sentence. Then again, Aurora was never going to behave the way you’d expect. 🥃

Sherry sweetness meets a hint of coffee and dark chocolate, bourbon and Oloroso casks married at the end of maturation.
