Legend has it that along the rugged coast of Cornwall, smugglers bringing rum ashore kept a clever trick up their sleeves. When the tax men appeared on the horizon, they’d toss their barrels of rum into the sea rather than get caught.
The sealed barrels floated safely offshore until the danger passed. But when they were hauled back out of the water, the rum sometimes had a slight salty edge from the sea.
The solution? Citrus, sugar, and a little ingenuity.
By blending the rum with fresh fruit and sweetness, locals created a delicious drink known as shrub, turning a problem into a tradition that’s still enjoyed today.
