Behind the dairy door | Starting as the freshest of milk, through to scooping into moulds, then into the brine bath and onto maturing room… every cheese goes on a journey through the dairy.
Here, Claudia is turning out our Mini Cremet goats’ cheeses after their overnight drain and carefully stacking them onto wire racks. They’re now ready to be brined before heading into the maturing room.
For now, they’re fresh and pale, with their beautiful, bare surfaces on show.
Soon, their signature white coats will begin to grow.
So much time, care and craft goes into each little cheese.
CHEESE NOTES: Sharpham Cremet is our decadent, soft, mould-ripened cheese, made with goats’ milk and enriched with cow’s double cream. It’s tricky to make, and needs careful handling. Cremet’s subtle, fresh flavour develops a rich earthiness with age. Have you tried it?
