Too hot to bake?🥵 Get your Mochi on! 🥭
Soft, fruity and bursting with mango. Chewy on the outside and packed with creamy mango flavoured ice cream.

Once you’ve mastered the mochi method it’s time to experiment with flavour and colour combinations.👩‍🍳✨

Servings 12 / Prep time 30 mins, plus chill time / Cook time 4 mins

Ingredients:

• 125g Condensed Milk
• 250ml Double Cream
• 20 Drops Foodie Flavours Mango Flavouring
• 200g Glutinous Rice Flour
• 75g Granulated Sugar
• 300ml Milk
• Yellow/Orange Gel Food Colouring (optional)
Cornflour, for dusting

Directions:

1- Whisk together the condensed milk, cream, mango flavouring and food colouring until you get stiff peaks.
2- Add the ice-cream mixture to a small loaf tin (or similar) and level it using a spatula or spoon.
3- Place in the freezer for at least 4 hours or until the ice-cream becomes firm.
4- Line a tray with greaseproof baking paper.
5- Using an ice-cream scoop, scoop ice-cream balls approx. 5cm wide and place them onto the paper, flattening the bottom.
6- Freeze for at least 1 hour.
7- When the ice-cream balls are firm, combine the rice flour and sugar in a bowl.
8- Add the milk and food colouring and stir.
9- Cover the bowl with cling film and pierce a few holes.
10- Microwave for 2 minutes.
11- Using a spatula, repeatedly fold the mixture.
12- Cover and microwave again for 1 minute, then fold. Repeat this step until a smooth, sticky dough has formed.
13- Dust some greaseproof paper with cornflour.
14- Scrape the warm dough onto the paper and dust the top of the dough with cornflour.
15- Using a rolling pin, roll the dough to a thickness of 5mm.
16- Let the dough sit at room temperature to fully cool and then cut circles using a 9cm cookie cutter.
17- With a pastry brush, dust the cornflour off both sides of one of the circles of dough and place an ice-cream ball in the middle.
18- Fold the dough around the ball and pinch the edges to seal.
19- Repeat this for all the ice-cream balls and place them in cupcake liners.
20- Freeze for 1 hour before eating.

New Recipe: Peppermint Slices 🌿🍫
Cool, Crisp and Covered in Chocolate. A Refreshing Slice Perfect for Summer Baking

Makes 16 / Prep time 25 mins, plus 5 hours chill time

Ingredients:

• 300g Digestive Biscuits
• 150g Unsalted Butter, melted plus extra for greasing
• 3 Tbsp Cocoa Powder
• 2 Tbsp Caster Sugar
• 400g Icing Sugar
• 3 Tbsp Melted Unsalted Butter
• 1 Tsp Foodie Flavours Peppermint Extract
• Green Gel Food Colouring (optional)
• 1-2 Tbsp Water
• 300g Milk Chocolate
• 1 Tbsp Vegetable Oil

Instructions:

1. Line a 9 inch square baking tin with greaseproof baking paper and set aside. 
2. Put the biscuits, cocoa powder and caster sugar into a food processor and blitz until you get a crumb consistency. If you don’t have a food processor, place the biscuits into a food bag and bash with a rolling pin.
3. Add the melted butter to the food processor and combine. Alternatively mix into the biscuit crumbs in a bowl.
4. Spread the biscuit crumb mixture across the bottom of your prepared tin and press it down to pack it in.
5. Pop the tin in the fridge for 30 mins. 
6. In a large bowl, mix together the icing sugar, melted butter, Peppermint extract, green food colouring and 1 tbsp water until smooth and thick. Add more water if required. 
7. Spread the peppermint icing over the top of the biscuit base and chill in the fridge for a further 30 mins. 
8. In a microwaveable bowl, melt the milk chocolate in 30 second bursts, stirring in between each until smooth. 
9. Stir in the vegetable oil and then pour the chocolate over the top of the peppermint layer.
10. Return to the fridge for 4 hours to set. 
11. Using a sharp knife, slice into squares and enjoy.

Cheese Tease - Cheese Focaccia Bread Recipe 🧀

Golden, Garlicky and Packed with Cheesy Flavour. A Focaccia No One Will Believe Is Vegan

The best part? You can make it your own with toppings. Think rosemary, caramelised onions, olives, chilli flakes, sundried tomatoes and more. What’s on your focaccia? 🤔

Servings 10 / Prep time 20 mins, plus proving time / Cook time 20 mins

Ingredients:

• 250g Strong White Bread Flour
• 250g Plain Flour
• 10g Fast Action Dried Yeast
• 2 Tsp Fine Sea Salt
• 5 Tbsp Olive Oil
• 400ml Warm Water
• 45 Drops Foodie Flavours Mature Cheddar Flavouring
• 2 Tbsp Garlic Butter (or dairy free alternative)

Directions:

1. Add the flours to a large bowl. Stir the yeast into one side of the bowl and the salt into the other, then fully combine.
2. Pour in 3 tbsp olive oil, the Mature Cheddar flavouring and gradually add the water until you have a slightly sticky dough.
3. If using a stand mixer, attach your dough hook and on a low-medium setting, knead the dough for 5 minutes.
4. If you are not using a stand mixer, knead with your hands for 8 minutes on a floured surface.
5. Pop the dough into a well-oiled bowl, cover with cling film and place it in a warm area to prove for approx. 1 hour, or until it has doubled in size.
6. Spread the dough out in a 20cm x 30cm oiled tin.
7. Cover with a tea towel and prove for another 30 minutes.
8. After the final prove, drizzle some olive oil over the top and dimple the dough using your fingers.
9. Bake for 20 mins in a preheated oven at 220°C/200°C fan.
10. Once baked, immediately brush the top with melted garlic butter. Best served warm.
