I had the pleasure of visiting Vietnam in 2024, and it was fuelled in part by the famous sandwiches known as Bánh mì (which incidentally does just translate as "bread"). I watch a lot of YouTubers so for better or worse I found myself on a mission to find the best one, and what I generally found was - it's just a sandwich!!! You don't need to think too hard about trying to recreate this famous dish if you want to make one for yourself. You can pick any of the general toppings that you would find available in Vietnam (they are all readily available here in the UK) and hoy it in a nice warm baguette and dress it up however you want - and you have a winner! They are incredibly popular with backpackers, and they hit the spot at any time of day.

Double Ghost Honey Ham!!

I actually remember the first time I encountered a Christmas ham!!! I visited my best friend's house and his Mum had made a ham that was purely for snacking on. It was a Jamaican Jerk ham - spicy and salty. Just unbelievably delicious.

The ham I made here is a simple honey glaze ham. It was simmered for 1 hour with some simple aromatics, then covered in honey and baked for another hour using our Ghost Honey as a glaze. Then served simply sliced in a white roll with some more Ghost Honey to add some more sweet heat. A delicious Christmas tactical leftover treat!

Throwback post to 2021 and to the very first batch of chilli sauce that I fermented during lockdown. After following YouTube videos and buying some questionably cheap equipment from Amazon, I attempted to recreate the taste of a big brand chilli sauce. It didn't taste anything like it, but it was good, in fact in some ways it was a lot better! My methods changed as I grew and learnt from my experiences but I still love to experiment, try new things and grow my ideas.

NEW - GHOST HONEY - NEW

I started developing this recipe with the singular goal of making a hot honey that was really flipping hot - one that didn't lose it's heat the minute it was added to my pizza as annoyingly a lot of other hot honey products seem to have that flaw. That's why I selected fruity fiery GHOST CHILLI PEPPERS aka one of the hottest chillies grown in the world today so that this hot honey would be sweet but also bring serious levels of heat. Extremely happy with this one I think you are going to love it!

A mild-ish hot sauce, with a little Scotch Bonnet kick to make it interesting! Contains a hefty punch of garlic.

Sweet, sour and hot. Great on a bacon sandwich, soup noodles or just about anything!
