Arrosticini sold out at TUCO.

The comments we kept having was about simplicity. One ingredient, minimal prep, fast to cook, consistent every time.

That's the thing about traditional street food formats. They've survived because they work. Not because they're on trend.

We brought arrosticini back from Abruzzo because we'd eaten them at roadside grills and knew what they could do in a UK foodservice setting. TUCO confirmed it. Street Food Expo is next.

This summer was different.

The heatwaves changed the pattern. Footfall at events and leisure sites didn't follow the usual curve. It came in waves. Operators who'd planned for a steady season found themselves dealing with a much less predictable one.

Volume spikes at short notice. Products selling through faster than anyone expected. Menus being pulled toward the things that were fast to serve and easy to run at pace.

The operations that came through it well weren't necessarily the ones with the most sophisticated plans. They were the ones with suppliers who picked up the phone and found a way.

That's the part we don't talk about enough. Not just the product but the relationship behind it. The fact that when something unexpected happens mid-season, there's someone on the other end who knows your operation and is already working on a way through it.

The year isn't over. Autumn and winter events are still ahead. If your supplier didn't deliver this summer, that conversation is worth having now.
