Hamur için (Elde açılacaksa):

3 su bardağı un

1 çay kaşığı tuz

1 su bardağı ılık su

2 yemek kaşığı zeytinyağı

Hazır yufkayla yapacaksanız:

3 adet hazır yufka

İç harcı için:

250–300 g beyaz peynir (lor veya ezine)

1 küçük demet maydanoz (ince kıyılmış)

İsteğe bağlı: 1 çay kaşığı pul biber

Sosu için:

Yarım su bardağı süt

Yarım su bardağı sıvı yağ

1 adet yumurta

Hazırlanışı
1. İç harcı hazırlayın

Beyaz peyniri bir kaba ezin.

İnce kıyılmış maydanozu ve varsa pul biberi ekleyin.

Güzelce karıştırın.

2. Sosu hazırlayın

Süt, sıvı yağ ve yumurtayı bir kapta çırpın.

Yufkaların arasına sürmek için kenara alın.

Hazır yufka ile en klasik peynirli börek
3. Yufkaları hazırlayın

İlk yufkayı tezgâha serin ve üzerine sostan gezdirin.

İkinci yufkayı üzerine koyup yine soslayın.

Üçüncü yufkayı da serin.

Üç katlı yufkayı geniş bir rulo şeklinde sarın.

4. Şekil verin

Ruloyu kendi etrafında dolayarak gül böreği şekli yapabilir
veya dilimleyerek tepsiye dizip çubuk börek şeklinde pişirebilirsiniz.

5. Pişirme

Üzerine yumurta sarısı sürün.

180°C (356°F) önceden ısıtılmış fırında
25–35 dakika, üzeri kızarana kadar pişirin.

El açması börek yapmak isterseniz
3. Hamuru yoğurun

Un, tuz, su ve zeytinyağını karıştırıp yumuşak bir hamur yoğurun.

4. Beze yapıp açın

A good burek, banitsa, or plăcintă begins with something simple:
a handful of flour sifted like fresh snow over a wooden table.

The dough is kneaded with patience—never rushed—
until it becomes smooth as silk and obedient as a well-told story.
Then comes the magic of stretching it thin,
almost transparent, like a curtain of morning light.

Melted butter joins the work, brushed lovingly over every delicate layer,
so the pastry bakes into golden crispness that shatters softly with each bite.
Into the folds goes the heart of the recipe:
crumbled cheese, salty and bright,
a filling that tastes like fields, sun, and home.

the pastry is shaped with quiet devotion.
