Smoked Chicken Lettuce Wraps

With the great British Summertime once again in full bloom it was far to warm to be cooking indoors, these wonderful smoked chicken breasts from Herb Fed Poultry are the most perfect addition to any salad, One smoked chicken breast is super big and with its delicious rich smoky flavour easily will serve 3-4 people if you want to make these delicious and rather easy lettuce wraps. I made a batch of delicious creamy coleslaw to go with them.

Tomahawks

I’ve very kindly been gifted from the fabulous Eversfield Organic this truly magnificent Tomahawk steak, it was with great luck that the weather has turned out glorious once again so we fired up the Kadai - Original Barbecue & Fire Pit Combination to ensure we maximised the beautiful Tomahawk in all its glory. Gunpowder Chicken

We’ve had the most fantastic few days celebrating my youngest daughter birthday. But back to reality today and with some left over chicken that didn’t quite make it to the bbq,

The gunpowder seasoning was aptly named, it was in a little container in my spice drawer and so I put it to use for marinating the chicken in preparation for popping onto skewers should I need a back up. But as our friend said I might only be catering for 10 or so but I’ll have enough food for 30! How well they know me.

I simply added chopped onion and fresh tomatoes and served with rice and salad.

Salmon & Prawn Tacos

Love the colour on both the salmon and the prawns as they cooked, so bright and beautiful they really drew us in and tasted spectacular. After another busy day of chasing my tail again and more trips to the airport then an Uber driver this week I was extremely pleased to sit still and enjoy a glorious evening with my hubby and our girls.

Sea Bass & Pea Risotto

Creamy risotto always hits the spot, it’s pure comfort every time, I used my own chicken stock for this one which varies in flavour every time, this one was a particularly good one. Made up from wonderful chicken from Herb Fed Poultry and an assortment of veggies. The sea bass was cooked so that the skin was wonderfully crisp and the flesh beautifully soft. Seasoned slightly with a pinch of salt.

Marry Me Chicken.

This recipe has been an Internet sensation for quite some time, yet controversial the first time I ever made it. I really wasn’t too sure whether it was a bit of me. It seemed to be lacking. Maybe I’m just used to stronger flavours. Anyway, I thought I’d give it another go, this time I went overboard with the herbs and spices, which in all honestly seemed to bring the whole dish alive.

4 Chickem breast sliced in half and flattened
I tub of good quality sun-dried tomatoes
One Small tub of cream
4 large garlic cloves crushed
1 red onion sliced fine
1 heaped tablespoon dried thyme
1 heaped teaspoon red pepper flakes
1/2 tablespoons tomato purée
1/2 teaspoons chilli flakes
1 teaspoon salt
2 teaspoons ground black pepper
50g grated Parmesan
300 ml good quality chicken stock
Squeeze of lemon juice
