Stir fry Green Beans

No Jerk Chicken, Rice and peas is complete without a side of greens in my opinion. So when I saw this recipe in my new book I couldn’t resist. This rather tasty long bean stir fry really did sit nicely along side the two, however I could just have east a side of these on there own.

Onion
Garlic
Tomato
Red pepper
Soy sauce
Lime juice
Sat & black pepper

Rice and Peas

No Jerk Chicken is complete without a good helping of rice and peas as a base. This was quite honestly the best recipe I’ve used to date. It was from a fabulous new cookbook that I spotted at the airport recently on my return back from the Cayman Islands, I bought myself one and my lovely friend to whom recently celebrated a big birthday.

Jerk Chicken

We are as a family great lovers of Jerk Chicken and having recently just returned from a glorious trip to the Cayman Islands where the Jerk Chicken was seriously good I was intrigued as to how this frozen pot of fresh herbs from Ice Kitchen would compare.

The instructions are for smaller pieces of chicken but I opted for a extra large whole chicken to which I slathered two pots over the entire chicken, a little under the skin too, then let the chicken slowly cook for maximum flavour. Can I say we were all extremely happy with the results. The whole chicken was filleted into sections on serving and the carcass was bare and ready to be made into stock by the end of dinner. The paste lived up to expectations as being very authentic and true to what we’d previously eaten last month on holiday.

Moules-frites

I made a rich tomato sauce with chopped onion, garlic and crispy chorizo to steam these big juicy mussels in. Served quite simply with a side of crispy chips for soaking up that glorious sauce.

I recently bought Persiana Easy when I was recreating a recipe for my lovely friends Herb Fed Poultry I don’t know about you but each book Sabrina Ghayour-Lynn has brought out seems to be full of irresistible recipes that are quite simple and effective. This gorgeous savoury mince was right up our street and tasted amazing. It was pretty simple to make. Incredibly delicious too.

Paprika, Garlic, Lemon & Za’atar Potatoes

This recipe is from the wonderful Sabrina Ghayour-Lynn - Persian Easy cookbook and like all her other recipes it’s truly delicious, I’m always in the look out for new ideas for potatoes as we love them so much and they liven up a meal quite simply and effectively.

A month of reflection, slowing down and taking in the air.

A gorgeous trip to Jersey at the beginning of the month, picnics & BBQ’s on the beach which was a first in all the years we’ve been in Jersey. We were totally unprepared for the sand getting in everything but we had a laugh all the same. Long beach walks and coastal drives along with some magnificent sunsets.

August has however seen me based a little more at the family home this month for ease, with a wonderful visit from my lovely cousin who came baring gifts of gorgeous Portuguese pottery and some amazing flor de sal’s we were showing her around and cooking up some of our favourite dishes.

I’ve met friends for brunch in wonderful places. My gorgeous cousins daughters met us for coffee in the village. Picnic dinner at my lovely mums. Finally caught up with my amazing friend who called round to see us when hubby was in town. I was taken for a spin in my friends new mega truck that was so much fun as the smallest lady in town rocked up in a monster truck. Long walks. Lazy days, cooking days and quiet days. It’s been just the tonic I needed while I got myself and my house in order.

My lovely dad celebrated his 74th Birthday and I made him a pie. Because quite frankly he loves pie just as much as I do.

Flowers are from my lovely hubby because I had a little visit to the local hospital. Blessed with a window view, stockings and a gown. I can’t fault the NHS one bit.

Then for the first time in what feels like forever I had all 5 of us under the same roof this weekend for a whole two nights! My goodness my heart was full. The laughter and love that filled the air was truly wonderful. Hearing the kids chatter throughout the house brought such a smile to my face and warmth to my heart. Gosh imma sentimental old fool these days!

Beef Stroganoff

This rather tender stir fry streak from Eversfield Organic made a wonderful beef stroganoff, the meat was so tender and succulent in a rich flavourful sauce. This is my lovely mums recipe, however I’ve added cream to mine whereas mum cooks it without cream, either way it’s very moorish, I served mine with garlic roast potatoes and buttered cabbage, it was utterly delicious.

500g frying steak
3oz butter
1/4 pint of beef stock
2 onions sliced fine
4oz mushrooms sliced
1 tablespoon tomato purée

Chicken, Barley & Bean Soup

Happy Bank Holiday!

It’s raining cats and dogs here so I’ve made a big pan of comfort soup to keep us cosy, using a good homemade chicken stock, carrots, celery, onions, garlic, barley and white beans Bold Bean Co I used bay leafs and a good pinch of salt and black pepper.

The chicken stock itself was packed with flavour as it was made from the chicken carcass of a well seasoned precious dish, so in actual fact this soup needed no other herbs or spices. To give it that gorgeous thick creamy texture I simply blended half of the jar of beans before adding them to the pan which gives this soup a truly decadent texture. It was truly delicious!

Sugar free jam and lashings of cream

I made this for me! I wanted biscuits but we had none in so I thought I’d make a cake to kill some time while I’m cooped up inside for the last few days hiding from the rain and feeling sorry for myself. In fact it’s been so long since I last made a cake I wasn’t even sure if the Aga was ticking over on the right temperature having switched it on and off over the last few months. However all worked well. The huge sponge sprang into life and it tasted amazing, filled with sugar free mixed berry and chia seed jam and lashings of cream.
