Fusion BBQ Jamaican Jerk Chicken Taco’s
The experimental cook straddles a couple of UKBBQWEEK days/cooks.
While these don’t win prizes for their look, these will have people coming back for more!
Two skinless chicken breasts were marinated for 24hrs in the fridge with some garlic olive oil and smoke and flame mild jerk rub.
Red onion and chopped red pepper got the same oil and rub combination plus for 3 X SPG rub.✅👌🏻✅🤤
The KJ with the half moon grate ran at 180°c/350°f. The MEATER Pro 2 probe monitored my cook, cooking the chicken breast to a perfect 74°c, still running with juice.
I sliced the chickens mixing with the veg, reggae reggae sauce and Lesley’s epic sweet pineapple chilli sauce 😍😍😍
I was going to add a salsa, but found a great recipe too late, it’ll make an appearance next time. There will definitely be a next time 👌🏻🤤🤤🤤🤤🤤🤤🤤
