🍓Strawberries & some particularly 'amazing raspberries' in the fridge this weekend!

😋Raspberry Compote

✔️200g raspberries (Jam grade ideal for this, just £1 for 400g!)
✔️2 tablespoons sugar
✔️1 tablespoon lemon juice
✔️2 tablespoons water.

▪️In a saucepan, bring the raspberries, sugar & lemon juice to the boil (for about 5 mins)
▪️Keep stirring
▪️Reduce heat to low & Simmer for 10 mins. It will thicken more as it cools.
▪️Serve warm or once cooled, store in a sterilised jar, in the fridge for up to 5 days.
💕Great as a topping for pancakes, ice cream, porridge etc.
