Butchery is a craft. And we’re proud to keep it that way. 🔪

At Nicholsons, we still use traditional butchery methods, working with whole carcasses and breaking them down by hand.

Why? Because good butchery isn’t just about following a cutting line. It’s about understanding the animal, feeling the muscles, following the natural seams and knowing how each individual cut will eat and cook.

Our butchers use their hands as much as their knives. They can feel where one muscle ends and another begins, working with the natural structure of the meat rather than simply cutting through it.

It takes skill, knowledge and years of experience, but it also means we can get the very best from every carcass, minimise waste and offer our customers so much more than just the familiar cuts.

Traditional skills. Proper butchery. And a craft we’re incredibly proud to keep alive.

🏆 WE NEED YOUR VOTE! 🏆

We’re very proud to share that Kathryn has been nominated for a Women in Meat Industry Award in the Independent Retailing category! 🥩

These national awards, organised by Meat Management magazine, recognise and celebrate the women making a difference across the UK meat industry, something Kathryn is incredibly passionate about.

As the fourth generation of the Nicholson family to run the business, and the first woman to lead it, Kathryn has spent her career helping to move Nicholson’s forward while championing an industry she absolutely loves.

And one thing she feels particularly strongly about? Showing women and girls that the meat industry is every bit as much for them as it is for the guys.

There’s so much more to our industry than people sometimes realise. It’s about craftsmanship and skill, but it’s also about food, creativity, science, people, business and innovation. Kathryn wants the next generation to see all of those opportunities and know there’s a place for them within it.
