Our Oysters

Whitstable oysters have been enjoyed for centuries. The Romans were shipping them back to Rome, and our company has been growing, harvesting and selling Whitstable oysters since 1793.

Today, our oysters are grown on our farm in Whitstable Bay, where the waters give them their distinctive flavour- plump, delicate and fresh, with a subtle sweetness.

Farm Manager & Supervisor

Brendan, our Farm Manager, is responsible for the people, boats and oysters out on the water. His right hand man and Farm Supervisor, Alex, helps to keep things running smoothly.

Farm Operatives

From working the oyster beds to harvesting and grading, our farm team are at the heart of what we do.

Tank Room Manager

From purification to packaging, Tyler makes sure that every oyster is ready to be enjoyed at their best.

Director

James oversees oyster production on the farm and most other aspects of the Trading Co. Passionate about sustainable oyster production and its links to Whitstable’s heritage, he works closely with the team to preserve and develop oyster farming in our seas.

Our Farm.

Since 1793, Whitstable oysters have been at the heart of what we do. Once harvested wild from our seabed, today they are grown on our beds in Whitstable Bay.

Carrying on a tradition from our shores to your table, our Farm is where our oysters begin.
