Whaligoe Catering at The Hidden Lane
Saturday 20th June

I am pleased to once again be at The Hidden Lane, 7A Brabster Street, Thurso, on Saturday 20th June from 11:00 am to 3:00pm.

I’m enjoying making some ‘specials’ this month, remember that I am happy to make you something special, as long as you give me a few days notice.

This months selection is below:

Fresh Hearthbreads
These are lovely fresh, or may be frozen for later use.

Sfinci
These Maltese treats are a dough that is loaded with white anchovies, onion, parsley and olives, little bite sized treats that are great on their own, or use them to scoop up our delicious dips.

Bigilla
This ever popular dip / spread is made from a mix of white beans, with fresh mint, parsley, and a heap of other good things.

Muhmarra
This delicious spread is made from red peppers, with lots of walnuts and a careful blend of spices. Always popular in the restaurant I recommend that you try this if you haven’t had it before.

Pasta - A variety
Pasta is made fresh on Friday, so you may use it straight away, or dry it for use later.
We will have fresh buckwheat pasta, and fresh egg pasta. Also, some dried egg pasta and dried spinach pasta.

Truckers Pasta Sauce
This tomato sauce is a winner, bursting with fresh flavours, and a subtle layering of spice, together with olives, capers and a little garlic.

Chilli & Garlic Oil
My chilli & garlic oil, great as a pasta sauce, dip for breads or just to use as seasoning in whatever you are cooking.

Swimming Rice
My grandmother’s recipe, always packed when we were heading off for a day at the beach. Carnaroli rice is simmered in chicken stock, then mixed with poached chicken, albacore tuna, a little onion, some diced red pepper and sweetcorn. All mixed together with a little mayo, this is a summertime treat.

Coronation Chicken Pie
This little pie has all the flavours of a good coronation chicken, lots of chicken, some diced apricots, a mild curry sauce and a good amount of coriander, finished with a little cream. Try one, you will want two.

Potato, Chilli & Coconut Pie
I originally used this filling for fried potato cakes, but love it so much I’ve used it in a pie, hopefully you will like it too.

Pasta Pie (Timpana)
Think of this as a pasta bolognaise in a pie, a tomato & beef sauce is mixed with a silky bechamel and worked through some pasta. It works for me.

Orange & Almond Cake
This mediterranean favourite is slow to make, but quick to eat.

Meringues - Chocolate or Vanilla & Almond
Crisp meringues, with a gooey centre.

Spiced Sugar Syrup
Some of my ever popular spiced sugar syrup, this is the same mix that I have been serving at the restaurant for many years, and makes the best fresh lemonade you will ever taste (in my opinion of course).

As we did the Dornoch Food & Drink show today, we made some extra which be available at a pop-up in Whaligoe (down from the public car park) from about 11:00 tomorrow (Sunday) until 14:00. We have some of most stuff as listed below - hope to see you tomorrow

Whaligoe Catering at Dornoch Food & Drink Market,
Saturday 30th May.

I am very pleased to be bringing a selection of my produce to the Dornoch Food & Drink Market, this Saturday the 30th May.

It is held at the Dornoch South Car Park, and runs from 11am to 2pm.

This months selection is below:

Fresh Hearthbreads
These are lovely fresh, or may be frozen for later use.

Pasta - plain egg, or spinach & egg
Pasta is made fresh on Friday, so you may use it straight away, or dry it for use later.

Truckers Pasta Sauce
This tomato sauce is a winner, bursting with fresh flavours, and a subtle layering of spice, together with olives, capers and a little garlic.

Caponata
This delicious mix of peppers, tomatoes, aubergine and other seasonal veg is a sweet and sour sensation. Great as a side dish for 2, or a tasty dinner for one.

Chilli & Garlic Oil
My chilli & garlic oil, great as a pasta sauce, dip for breads or just to use as seasoning in whatever you are cooking.

Barley Salad
This is a mixture of black and pearl barley, loaded with roasted grapes, toasted almonds and a dash of pomegranate molasses. Works warm or cold.

White Bean Salad
Delicate cannellini beans are dressed with loads of garlic & parsley for a flavour punch.

Honey & Ginger Aubergine
This is our favourite way of eating aubergine, sweet & spicy, may be eaten warm or cold.

King Oyster Mushrooms
Fabulous King Oyster Mushrooms are steamed with garlic butter.

Rabbit Stew
A labour of love, the rabbit is slow roasted in red wine, then deboned and added to a luscious tomato sauce, may be used with pasta, or veg.

Chicken Pies
Chunks of poached chicken in a white sauce with peas and red peppers.

Ricotta Pies
This is a typical Maltese pie, ricotta is mixed with a little spring onion, some parmesan, and peas, then bound with a little egg.

Beef Mince & Onion Pies
The tasty filling is simmered for a couple of hours, giving a rich mouthfeel.

Ricarelli
Small almond biscuits, scented with lemon.

Carta de Musica
These Italian delights are neither bread, nor cracker, but somewhere between. Paper thin, they keep well, and are delicious used to scoop up dips or crumble into soup.

Squid Salad
This delicate summer salad is comprised of lightly poached squid rings, cooked with cavolo nero, tomatoes and chickpeas.

Chicken & Leek Pies
Chunks of poached chicken in a white sauce with leeks.

Cheese & Potato Pies
A tasty mix of cheese, potato & onion fills these little pies to bursting point.

Pork & Beef Polpetti
Think of these as supercharged meatballs, roasted to get a light crust, then finished in a tomato sauce, spiced lightly, utterly delicious.

Hand made Gnocchi
If you have only eaten ‘industrial’ gnocchi before, these will be a surprise. They are soft, a little dense, simmered for a moment, then pan fried with a little grattato.

Maltese Ftira
This Maltese style pizza is more of a bread pie, stuffed with italian sausage, fennel seed, chopped potato, olives, capers, onion & a little tomato - finished with mozzarella & a little parmesan.

Ghost Chilli & Potato Pizza
This is a Roman style thin crust pizza, brushed with some ghost chilli bbq sauce, and topped with thinly sliced potatoes & chopped bacon, with a sprinkle of mozzarella.

Orange & Almond Cake
This mediterranean favourite is slow to make, but quick to eat.

Ricarelli
