A bowl of homemade houmous topped with Crazy Jack pumpkin seeds is always a good idea.
Try our recipe below:

Ingredients
Serves 4
1 tin of cooked chickpeas, drained and rinsed
Salt and pepper
2 garlic cloves
4tbsp tahini
4tbsp Crazy Jack Pumpkin Seeds, plus extra to sprinkle
4tbsp freshly squeezed lemon juice
Olive oil, to serve

Method
Place all the ingredients except the olive oil in a food processor and whizz until completely smooth.
Taste and season, then spoon into a small container. Drizzle with olive oil and sprinkle with Crazy Jack pumpkin seeds, then serve with warm toasted pitta shards.

Not your average salad 👏

Sweet Crazy Jack figs, crunchy walnuts and creamy cheese come together for the ultimate balance of flavour and texture.
Simple ingredients, done right.

Try our recipe below:

Ingredients
Prep: 10 minutes
Cook: 8-10 minutes
Serves 2
1 ciabatta roll, torn into bite sized pieces (85g)
1 tbsp olive oil
1 Romaine Heart, leaves torn (200g)
100g Crazy Jack Organic Soft Figs, thickly sliced
50g Crazy Jack Organic Walnut Pieces
1 ripe pear, cored and cut into thin wedges (150g)
100g gorgonzola, cubed
3 tbsp vinaigrette

Method
Preheat the oven to 200°C, gas mark 6.
Toss the bread in the oil and place on a baking tray. Bake for 8-10 minutes or until golden. Allow to cool.
Place the Romaine leaves on a large platter and scatter over the figs, walnuts, pear wedges, gorgonzola and croutons.
Drizzle with the dressing to serve.

Our Apricot & Lemon Drizzle Cake is soft, zesty and packed with naturally sweet Crazy Jack apricots for a delicious twist on a classic.
The perfect excuse to get baking (and slicing).

Method
Preheat the oven to 180oC, gas mark 4. Grease and line a 900g loaf tin.
Place 75g apricots in a bowl with 3 tbsp boiling water and leave for 10 minutes then puree with a stick blender.
Meanwhile, whisk the butter, caster sugar and lemon zest together in a large bowl until pale and fluffy, whisk in the eggs, 1 at a time and then the apricot puree and the juice of ½ lemon. Fold in the flour and almonds. Finely chop the remaining apricots and stir half of these into the batter, spoon into the prepared tin and bake for 40-45 minutes until golden and a skewer comes out clean.
Mix the granulated sugar with the remaining lemon juice and apricots and spoon over the cake as soon as it comes out of the oven. Allow to cool before removing from the tin.

100g butter, softened
150g caster sugar
Zest and juice 2 lemons
2 medium eggs
100g self raising flour
50g Crazy Jack Ground Almonds
50g granulated sugar

Big flavours, simple ingredients 🌿

Our Persian Lamb Couscous is packed with warming spices, crispy lamb and a touch of natural sweetness from Crazy Jack sultanas.
Finished with fresh herbs and crunchy pistachios for the perfect balance of flavour.

Ingredients
Make 2 portions
300g lamb mince
30g sultanas
30g pistachios
1tbsp baharat
1tbsp tomato paste
120g couscous
10g fresh mint
125g natural yoghurt
1 chicken stock cube
Olive oil
Salt and Pepper, to season

Method
Place the couscous and sultanas in a bowl and add 200ml of boiling water. Cover well and set aside for 10 minutes.
Place a large pan on a medium heat and add the pistachios. Toast for 2 minutes, or until they are darkened slightly, then transfer to a plate and set aside.
Place the pan back on a high heat and add the olive oil. Add the lamb mince to the pan and crumble in the stock cubes. Cook for 4 minutes or until it starts to brown.
Add the tomato paste, baharat and 100ml of boiled water. Cook for a further 5 minutes, or until crispy and cooked through.
Meanwhile, chop the mint finely and mix half with the yoghurt.
Chop the toasted pistachios finely.
Fluff the couscous with a fork.
Mix the remaining mint and the pistachios through the couscous.
Plate the couscous, top with the crispy lamb and add a dollop of minted yoghurt.
